Ingredients

Brownie Crust

  • 150 grams bittersweet chocolate
  • 76 grams unsalted butter
  • 183 grams granulated sugar
  • 2 large eggs (room temperature)
  • 2 tsp vanilla bean paste
  • 62 grams all purpose flour
  • 27 grams cocoa powder
  • 1/2 tsp salt
  • 226 grams semi-sweet chocolate chips

Cheesecake Filling

  • 680 grams full fat cream cheese (softened)
  • 140 grams granulated sugar
  • 2 tsp vanilla bean paste
  • 1 tbsp cocoa powder
  • 1/2 tsp salt
  • 140 grams sour cream (room temperature)
  • 3 large eggs (room temperature)
  • 200 grams semi-sweet chocolate chips

Chocolate Ganache

  • 200 grams heavy cream
  • 226 grams semi-sweet chocolate chips
  • 2 tbsp candy-coated chocolate pieces

Instructions

  1. Prepare Brownie Crust: Preheat your oven to 350°F (180°C) and line a 9-inch springform pan with parchment paper. Wrap the bottom with aluminum foil to prevent leaks. Melt the bittersweet chocolate and butter in a microwave-safe bowl, stirring every 30 seconds until smooth. Let this mixture cool slightly.
  2. Mix Brownie Batter: Using a hand mixer, beat granulated sugar, eggs, and vanilla bean paste on medium-high speed until frothy and pale. While mixing, gradually add the cooled melted chocolate and butter mixture and continue beating until well combined. Gently fold in all-purpose flour, cocoa powder, and salt until no dry streaks remain.
  3. Bake Brownie Crust: Pour the batter into your prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and allow it to cool while you prepare the cheesecake filling.
  4. Preheat for Cheesecake: Reduce the oven temperature to 325°F (165°C). Fill a large oven-safe skillet or casserole with warm water and place it on the bottom rack to create a water bath for even baking.
  5. Make Cheesecake Filling: Melt the semi-sweet chocolate chips in the microwave, stirring every 30 seconds until smooth, then let cool slightly. In a large mixing bowl, beat cream cheese and sugar until smooth. Add melted chocolate chips, vanilla bean paste, cocoa powder, and salt, beating on low until creamy. Mix in sour cream. Add eggs one at a time, beating well and scraping the bowl sides after the second and third eggs.
  6. Bake Cheesecake: Pour the filling over the cooled brownie crust and smooth the surface. Place the springform pan on the middle oven rack directly above the water bath. Bake for 60-70 minutes until edges are set and the center jiggles like Jell-O.
  7. Cool and Chill: Turn off the oven and crack the door open, leaving the cheesecake inside for 1 hour. Then remove the cheesecake and cool it on a countertop for an additional hour. Cover it tightly with plastic wrap and refrigerate overnight for optimal firmness and flavor.
  8. Prepare Chocolate Ganache: Place chocolate chips in a bowl. Heat heavy cream in the microwave for about 45 seconds until hot but not boiling. Pour the cream over the chocolate and let sit for 1 minute, then whisk until smooth and glossy. Cover with plastic wrap and chill in the refrigerator for 1 hour.
  9. Assemble and Serve: Once the cheesecake and ganache have fully cooled, release the springform pan sides and remove the cheesecake. Spread the ganache evenly over the top and sprinkle with candy-coated chocolate pieces. Slice and enjoy your Cosmic Brownie Cheesecake!

Notes

  • Ensure all eggs and dairy ingredients are at room temperature for smoother mixing and better texture.
  • Wrapping the springform pan with aluminum foil prevents water from the bath leaking into the cheesecake during baking.
  • The water bath helps the cheesecake bake evenly and prevents cracks.
  • Cooling the cheesecake gradually inside the oven and then at room temperature helps avoid cracking on the surface.
  • For best results, chill the cheesecake overnight to let flavors meld and texture set.
  • You can substitute candy-coated chocolates with sprinkles or chopped nuts for different toppings.
