This refreshing Cold Cucumber Soup combines crisp Persian cucumbers with creamy Greek yogurt, vibrant herbs, and a hint of lemon for a light, flavorful dish perfect for warm days. It’s a chilled, herbaceous soup that’s quick to prepare and elegantly garnished with fresh herbs and cucumbers.

Soup Ingredients

  • 6 Persian cucumbers, thinly sliced, reserve a few slices for garnish
  • 1½ cups plain whole milk Greek yogurt
  • ¾ cup fresh basil leaves
  • ¼ cup extra-virgin olive oil, plus more for drizzling
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons fresh dill, plus more for garnish
  • 1 garlic clove
  • ¾ teaspoon sea salt
  • ½ teaspoon honey
  • Freshly ground black pepper to taste
  • Fresh mint or chives, for garnish

Instructions

  1. Prepare the Ingredients: Thinly slice 6 Persian cucumbers, reserving a few slices for garnish later. Gather fresh basil, dill, garlic, and other ingredients to have them ready for blending.
  2. Blend the Soup: In a blender, combine the cucumbers, plain whole milk Greek yogurt, fresh basil leaves, extra-virgin olive oil, fresh lemon juice, fresh dill, garlic clove, sea salt, honey, and several grinds of freshly ground black pepper. Blend the mixture until completely smooth and well combined.
  3. Chill the Soup: Transfer the blended soup to a container and refrigerate for at least 4 hours. This chilling allows the flavors to meld and the soup to become refreshingly cold.
  4. Serve: When ready to serve, ladle the chilled soup into bowls. Drizzle a little extra olive oil over each serving. Garnish with the reserved cucumber slices, additional freshly ground black pepper, and fresh dill, mint, and/or chives for an aromatic and colorful presentation.

Notes

  • You can adjust the thickness by using more or less Greek yogurt or adding a splash of cold water.
  • If Persian cucumbers aren’t available, regular cucumbers peeled and seeded can be substituted.
  • For a tangier soup, increase the lemon juice slightly to taste.
  • Make sure to chill the soup adequately—it tastes best cold.
  • For a dairy-free version, substitute the Greek yogurt with a plant-based yogurt alternative.
