Ingredients

Wet Ingredients

  • 2 large eggs (at room temperature)
  • 3/4 cup plain Greek yogurt
  • 1/4 cup 2% milk
  • 2 teaspoons vanilla bean paste
  • 1/2 cup unsalted butter (melted)

Dry Ingredients for Muffins

  • 1 cup light brown sugar (220 grams)
  • 2 cups all-purpose flour (240 grams)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt

Streusel Topping

  • 1/2 cup all-purpose flour (60 grams)
  • 1/2 cup light brown sugar (55 grams)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter (cubed)

Instructions

  1. Prep. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners; you may need 13 or 14 liners as you'll be making about 14 muffins.
  2. Combine wet ingredients. In a mixing bowl, whisk together the eggs, Greek yogurt, 2% milk, vanilla bean paste, and melted unsalted butter until smooth and fully combined.
  3. Add dry ingredients. To the same bowl, add the light brown sugar, all-purpose flour, ground cinnamon, baking powder, baking soda, and kosher salt. Gently stir with a spoon until just combined, taking care not to overmix. Let the batter rest for 15 minutes to hydrate the flour and improve texture.
  4. Add batter to liners. Using a cookie scoop or spoon, fill each muffin liner approximately 3/4 full with the batter.
  5. Make streusel topping. In a small bowl, combine the flour, light brown sugar, ground cinnamon, and kosher salt. Add the cold cubed butter and use your fingertips to rub the butter into the dry ingredients until the mixture is crumbly with pea-sized chunks.
  6. Add streusel topping to muffins. Generously pile the streusel topping over each muffin, pressing it slightly onto the batter. The topping can be a bit messy but will bake to a crunchy, caramelized crust.
  7. Bake coffee cake muffins. Place the muffin tin in the preheated oven and bake for about 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with just a few moist crumbs.
  8. Cool. Allow the muffins to cool in the pan for 5-10 minutes to set, then carefully transfer them to a wire rack to cool completely before serving.

Notes

  • For best results, ensure the butter for the streusel topping is cold; this helps create a crumbly texture.
  • If you don't have vanilla bean paste, vanilla extract can be used as a substitute.
  • Letting the batter rest before baking helps improve the muffins' texture by hydrating the flour.
  • Store muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
