Cinnamon Roll Blondies combine the rich sweetness of classic blondies with the warm, spiced flavor of cinnamon rolls. Swirled with cinnamon sugar and topped with a luscious cream cheese glaze, these bars offer a delightful treat perfect for breakfast or dessert.

Ingredients

Blondie Batter

  • ½ cup unsalted butter, melted and cooled slightly
  • 1 cup packed light brown sugar
  • 1 large egg + 1 large egg yolk, at room temperature
  • 1 tablespoon vanilla bean paste
  • 1 cup all-purpose flour
  • ¼ teaspoon baking powder
  • ½ teaspoon salt

Cinnamon Sugar Swirl

  • 1 tablespoon cinnamon
  • ¼ cup white sugar

Cream Cheese Icing

  • 1 tablespoon cream cheese
  • 1 tablespoon heavy cream
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla bean paste
  • Pinch of salt

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (177°C). Line an 8 x 8-inch baking pan with parchment paper and set aside to ensure easy removal of blondies after baking.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter and packed light brown sugar until combined. Add the whole egg, egg yolk, and vanilla bean paste; mix thoroughly to create a smooth mixture.
  3. Combine Dry Ingredients: In a separate bowl, stir together the all-purpose flour, baking powder, and salt to evenly distribute the leavening agent and seasoning.
  4. Make Blondie Batter: Add the wet ingredients into the dry ingredients. Fold gently with a spatula until just combined, ensuring no large flour clumps remain but avoiding overmixing to keep the blondies tender.
  5. Prepare Cinnamon Sugar Swirl: Mix the cinnamon and white sugar in a small bowl. Pour the blondie batter into the prepared pan, then drop large spoonfuls of the cinnamon sugar mixture evenly on top. Use a butter knife to swirl the cinnamon sugar into the blondie batter, creating a marbled effect.
  6. Bake the Blondies: Place the pan in the preheated oven and bake for 30 to 40 minutes, or until the edges are golden brown and set, and the blondies have puffed up. The center may still seem slightly doughy but will firm up as they cool.
  7. Make Cream Cheese Icing: While the blondies cool, combine the cream cheese, heavy cream, powdered sugar, vanilla bean paste, and a pinch of salt in a small saucepan over medium-low heat. Whisk continuously until the mixture is melted, smooth, and fully combined. Remove from heat and allow the glaze to cool slightly.
  8. Glaze and Serve: Once the blondies have cooled completely, drizzle the cream cheese icing over the top. Cut into 9 squares and enjoy your cinnamon roll blondies!

Notes

  • The middle of the blondies might look undercooked when you remove them from the oven, but they will continue to set as they cool.
  • Using parchment paper in the pan helps to lift the blondies out easily without sticking.
  • For best results, use room temperature eggs to ensure even mixing.
  • You can adjust the amount of cinnamon in the swirl to suit your taste preferences.
  • Store leftover blondies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
