Crispy cinnamon roasted chickpeas are a delicious and healthy snack option, perfectly crunchy and coated with a warm blend of cinnamon and a hint of honey. This easy-to-make recipe uses simple pantry ingredients and oven roasting to create a flavorful treat that's great for snacking or adding a crunchy topping to salads and desserts.

Ingredients

Chickpeas

  • 1 can (16 oz.) chickpeas, low sodium if possible (garbanzo beans)

Coating

  • 1 tablespoon melted coconut oil
  • 1 teaspoon honey
  • ¾ teaspoon ground cinnamon
  • 1 pinch of salt (optional)

Instructions

  1. Prep: Preheat your oven to 400°F (200°C). Rinse and drain the chickpeas thoroughly. Spread them out on a lint-free towel and dry them well, gently rubbing the chickpeas to remove any loose skins. This helps ensure they crisp up nicely in the oven.
  2. Mix: In a medium-sized bowl, combine the dried chickpeas with melted coconut oil, honey, ground cinnamon, and a pinch of salt if using. Toss well until all the chickpeas are evenly coated with the mixture.
  3. Bake: Spread the coated chickpeas out in a single layer on a small rimmed baking sheet. Place the sheet into the oven and bake for 25 to 30 minutes. Every 10 minutes, shake the pan or stir the chickpeas to ensure even roasting. Bake until the chickpeas turn crispy and golden brown.
  4. Cool: Once roasted, remove the baking sheet from the oven and allow the chickpeas to cool completely. Cooling helps them become even crispier before serving.

Notes

  • Using low sodium chickpeas allows you to control the salt level in the recipe or skip it entirely for a healthier snack.
  • Removing the skins from chickpeas helps them roast more evenly and become crispier.
  • Letting chickpeas cool completely on the baking sheet after roasting is key to achieving maximum crunch.
  • Store leftover roasted chickpeas in an airtight container at room temperature to keep them crisp.
  • You can customize the flavor by swapping cinnamon for other spices like paprika, cumin, or chili powder.
