A delicious and creamy Chocolate Peanut Butter Overnight Oats recipe perfect for a quick, nutritious breakfast. This recipe combines the rich flavors of cocoa and peanut butter with creamy Greek yogurt, oats, and a touch of sweetness, all soaked overnight for a convenient, ready-to-eat meal.

Ingredients

Main Ingredients

  • 1 tablespoon unsweetened cocoa powder
  • ⅔ cup milk of choice
  • ½ cup old-fashioned rolled oats
  • ⅔ cup vanilla Greek yogurt (nonfat or low-fat, one 5.3-ounce container)
  • 1 tablespoon creamy peanut butter
  • 1 tablespoon chia seeds
  • 2 teaspoons maple syrup or honey (or to taste)
  • ½ teaspoon vanilla bean paste
  • Pinch of kosher salt

Toppings

  • 2 teaspoons creamy peanut butter (for drizzling, one teaspoon per serving)
  • 2 teaspoons mini dark chocolate chips (one teaspoon per serving)
  • 2 teaspoons chopped roasted salted peanuts (one teaspoon per serving)
  • Flaky sea salt (optional)

Instructions

  1. Mix cocoa and milk: Add the cocoa powder to a bowl along with the milk. Whisk until the cocoa is mostly dissolved to avoid dry cocoa pockets in the oats.
  2. Combine all ingredients: Warm the tablespoon of peanut butter in the microwave for 10 to 20 seconds until loose and pourable. Add it to the cocoa milk along with oats, yogurt, chia seeds, maple syrup, vanilla bean paste, and kosher salt. Stir thoroughly until fully combined and smooth.
  3. Refrigerate overnight: Divide the mixture evenly between two large containers or jars that hold at least 1 cup each. Cover tightly and refrigerate for at least 4 hours or overnight to allow flavors to meld and oats to soften.
  4. Serve with toppings: In the morning, stir each portion well and add a splash of milk if a thinner consistency is desired. Warm the reserved peanut butter for 20 to 30 seconds to make it drizzle-friendly. Drizzle one teaspoon of warm peanut butter over each serving, then sprinkle mini dark chocolate chips, chopped roasted salted peanuts, and a light sprinkle of flaky sea salt if using. Enjoy immediately.

Notes

  • Use any milk of your choice including dairy or plant-based alternatives.
  • Vanilla bean paste can be substituted with vanilla extract if unavailable.
  • Adjust sweetness by varying the amount of maple syrup or honey.
  • For a vegan version, use plant-based yogurt and a vegan sweetener.
  • Chilling the oats overnight is crucial for the oats and chia seeds to soften properly.
  • Peanut butter can be swapped with any other nut or seed butter if desired.
