These Chocolate Peanut Butter Oatmeal Bars are a delicious and easy-to-make treat featuring a luscious blend of chocolate, peanut butter, and oats. Perfect for dessert or a snack, they require only six ingredients and come together quickly with minimal effort.

Ingredients

Butter and Sugar Mix

  • 2 sticks unsalted butter
  • ½ cup light brown sugar, packed
  • 1 teaspoon vanilla extract

Oatmeal Base

  • 3 cups quick cooking oats

Chocolate Peanut Butter Mixture

  • 1 cup chocolate chips, semi sweet or dark chocolate
  • ½ cup peanut butter

Instructions

  1. Prepare the Pan: Line a 9×9 inch pan with aluminum foil or parchment paper and set it aside to make removal and cleanup easier.
  2. Cook Oatmeal Mixture: In a large saucepan over medium heat, melt the unsalted butter. Stir in the brown sugar until it is well dissolved and then add the vanilla extract and quick cooking oats. Cook stirring constantly until all ingredients are well combined and the mixture is cohesive.
  3. Form Bottom Layer: Divide the oatmeal mixture in half. Press half of it evenly into the bottom of the prepared pan, smoothing with a spatula or your hands to create a compact base layer.
  4. Prepare Chocolate Peanut Butter: Using a double boiler, gently melt together the chocolate chips and peanut butter, stirring constantly until the mixture is smooth and fully combined.
  5. Layer Chocolate Mixture: Pour about three-quarters of the melted chocolate and peanut butter mixture evenly over the oat base layer in the pan.
  6. Add Top Oat Layer: Spoon the remaining half of the oatmeal mixture over the chocolate peanut butter layer, covering it completely and gently pressing it down.
  7. Drizzle Topping: Drizzle the remaining chocolate peanut butter mixture across the top of the oat layer for a beautiful, glossy finish.
  8. Chill and Set: Cover the pan and refrigerate for at least 2 hours to allow the bars to set firmly.
  9. Serve: Once fully set, cut the bars into 9 squares and serve as a delectable dessert or snack.

Notes

  • Use parchment paper for easier removal compared to aluminum foil.
  • Quick cooking oats absorb butter and sugar better, but old-fashioned oats can be substituted for a chewier texture.
  • Adjust sweetness or chocolate type according to your preference, using dark or semi-sweet chocolate chips.
  • Store bars in an airtight container in the refrigerator for up to 5 days.
  • For a nut-free option, substitute peanut butter with sunflower seed butter.
