Delight in these soft and chewy Chocolate Chip Pistachio Cookies, combining the rich flavors of semi-sweet chocolate chips with crunchy, nutty pistachios. A perfect treat for any occasion, these cookies are easy to make and bake to golden perfection in just 30 minutes.

Ingredients

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda

Wet Ingredients

  • 3/4 cup light brown sugar
  • 1/2 cup unsalted butter (at room temperature)
  • 1 tsp vanilla bean paste

Add-ins

  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup pistachios, chopped

Instructions

  1. Preheat the Oven: Preheat your oven to 350℉ (175℃) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Cream Butter and Sugar: In a large mixing bowl, use an electric hand mixer or stand mixer on medium speed to cream together the softened unsalted butter, light brown sugar, and vanilla bean paste until the mixture is smooth and fluffy.
  3. Add Dry Ingredients: Gradually add the all-purpose flour, baking powder, and baking soda to the creamed mixture. Mix on low speed until a soft dough forms, making sure all ingredients are well combined and the dough is smooth.
  4. Fold in Chocolate Chips and Pistachios: Using a spatula or wooden spoon, gently fold in the semi-sweet chocolate chips and finely chopped pistachios to evenly distribute them throughout the dough.
  5. Portion the Dough: Using a 2-tablespoon cookie scoop or ice cream scoop, portion the dough into 6 balls onto the prepared baking sheet. Optionally, sprinkle a few extra chocolate chips or pistachios on top of each dough ball for added texture and visual appeal.
  6. Bake the Cookies: Bake the cookies in the preheated oven for 8 to 10 minutes, or until the bottoms turn a light golden brown, indicating they are cooked through but still soft inside.
  7. Cool and Serve: Remove the cookies from the oven and transfer them to a wire rack to cool for a few minutes before serving or storing in an airtight container.

Notes

  • Ensure butter is at room temperature for easier creaming and better texture.
  • Do not overbake; cookies should be light golden at the bottom to remain soft.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • For a nut-free version, omit pistachios and add additional chocolate chips or substitute with seeds.
  • Vanilla bean paste can be substituted with vanilla extract if necessary.
