A refreshing and creamy Chocolate Chip Mint Smoothie combining the rich flavors of dark chocolate and cool peppermint with nutritious spinach and protein-packed Greek yogurt. Perfect for a quick, healthy snack or post-workout boost.

Ingredients

Liquids

  • 1/2 cup coconut milk (full fat, canned)
  • 1/2 cup Greek yogurt (or plain Greek yogurt)
  • 1 teaspoon vanilla extract
  • 1/2-1 teaspoon peppermint extract

Fruits & Vegetables

  • 2 bananas (chopped and frozen)
  • 4 cups spinach (fresh or frozen)
  • 6 ice cubes

Additional Ingredients

  • 20 grams whey protein (unsweetened/unflavored or your favorite protein powder)
  • 2 tablespoons 85% dark chocolate (chopped or dark chocolate chips)

Instructions

  1. Prepare the Base: Add the liquid ingredients—coconut milk, Greek yogurt, vanilla, and peppermint extract—into a blender first. Then add chopped frozen bananas, spinach, ice cubes, and whey protein. Blend until the mixture is very smooth, creamy, and the spinach is fully incorporated, creating a vibrant green base.
  2. Incorporate Chocolate Chunks: Add the chopped dark chocolate or dark chocolate chips to the smoothie. Pulse the blender 5-6 times just until the chocolate breaks into chunky pieces, giving texture without fully blending it in.
  3. Serve and Enjoy: Pour the smoothie into glasses, optionally topping with extra dark chocolate chips for garnish. Enjoy immediately while thick and cold for the best texture and flavor.

Notes

  • Start with 1/2 teaspoon peppermint extract and adjust to taste, as peppermint extract intensity varies.
  • Use frozen bananas and ice cubes to ensure a thick, chilled smoothie without needing extra sweeteners.
  • For a dairy-free version, substitute Greek yogurt with a plant-based yogurt alternative.
  • Whey protein can be swapped with any preferred protein powder to suit dietary needs.
  • Adding more dark chocolate chips as a topping enhances the chocolate-mint experience and adds a nice crunch.
