These chocolate chip coffee cookies combine the rich flavors of coffee and chocolate in a buttery, sweet cookie with crisp edges and chewy centers. They are easy to make and can be adapted to be both gluten and dairy free, perfect for a delightful treat any time of day.

Ingredients

Wet Ingredients

  • ½ cup unsalted butter, room temperature
  • ⅓ cup white sugar
  • ⅔ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 ¾ cup gluten free all purpose baking flour (can substitute regular flour)
  • ¼ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons instant coffee powder
  • ⅔ cup semi-sweet chocolate chips

Instructions

  1. Cream Butter and Sugars: Add the softened butter and both white and brown sugars to a mixing bowl or the bowl of a stand mixer. Cream together for about one minute until the mixture is smooth and fluffy.
  2. Add Egg and Vanilla: Incorporate the egg and vanilla extract into the creamed butter mixture. Beat on medium speed until well combined, ensuring a uniform texture.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the gluten free all purpose flour, baking soda, baking powder, salt, and instant coffee powder. Spoon and level the flour to measure accurately.
  4. Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined to avoid overworking the dough. Then fold in the semi-sweet chocolate chips gently with a spatula.
  5. Chill the Dough: Transfer the dough to the refrigerator and chill for 20 to 30 minutes. This helps to firm the dough and enhances the cookie texture during baking.
  6. Preheat Oven: Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  7. Portion and Shape Cookies: Using a 2-tablespoon scoop, portion the chilled dough onto the prepared baking sheet, spacing them adequately to allow for spreading. Press a few extra chocolate chips on top of each cookie for an appealing finish.
  8. Bake Cookies: Bake the cookies in the preheated oven for 12 to 15 minutes, or until the edges turn golden brown. The centers will remain soft and chewy.
  9. Cool: Allow the cookies to cool on the baking sheet for 10 to 15 minutes to firm up further, then transfer them onto a wire rack to cool completely before serving. Enjoy your coffee-infused chocolate chip cookies!

Notes

  • For dairy-free version, substitute unsalted butter with a plant-based butter alternative.
  • If you prefer regular flour over gluten free, use an equal amount of all-purpose flour.
  • Instant coffee powder can be adjusted to taste, reduce if you want a milder coffee flavor.
  • Pressing extra chocolate chips on top before baking enhances the look and chocolate burst in each cookie.
  • Do not overmix dough after adding flour to maintain chewy texture.
