These Chocolate Avocado Muffins are a rich, moist, and healthier twist on traditional chocolate muffins. They combine creamy mashed avocado with cocoa powder and chocolate chips for a fudgy texture and deep chocolate flavor, all while incorporating wholesome ingredients. Perfect for breakfast, snacks, or dessert, these muffins are easy to make and deliver a delightful balance of nutrition and indulgence.

Ingredients

Dry ingredients

  • ½ cup + 2 tablespoons all purpose flour
  • ¼ cup cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ⅛ teaspoon salt

Wet ingredients

  • 1 large egg
  • ½ cup mashed avocado (about 1 medium)
  • ¼ cup sugar
  • ¼ cup packed light brown sugar
  • ¼ cup milk
  • ½ teaspoon vanilla bean paste
  • ¼ cup semi-sweet chocolate chips, plus more for topping

Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Line a muffin pan with 5 paper liners to prevent sticking and make removal easy.
  2. Mix dry ingredients: In a small bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt until combined. Set aside.
  3. Mix wet ingredients: In a larger bowl, whisk the egg, mashed avocado, sugar, light brown sugar, milk, and vanilla bean paste together until the mixture is smooth and the sugars are dissolved.
  4. Combine wet and dry ingredients: Add the dry ingredient mixture and ¼ cup semi-sweet chocolate chips to the wet ingredients. Stir gently just until combined, taking care not to overmix to keep the muffins tender.
  5. Divide batter and add toppings: Evenly distribute the batter among the prepared muffin cups. Sprinkle additional chocolate chips on top of each muffin for extra chocolatey goodness.
  6. Bake: Bake the muffins in the preheated oven for 24 to 26 minutes. Check doneness by inserting a toothpick into the center of a muffin; it should come out clean or with a few moist crumbs. Avoid overbaking to retain moisture and fudginess.
  7. Cool and serve: Allow the muffins to cool in the pan on a wire rack before enjoying.

Notes

  • Do not overbake to ensure muffins remain moist and fudgy.
  • Using ripe avocado is key to achieving the best texture and flavor.
  • You can substitute milk with any plant-based milk for a dairy-free version.
  • Vanilla bean paste enhances flavor but can be substituted with vanilla extract.
  • Store muffins in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
