Ingredients

Salad Ingredients

  • 1 - 15oz can chickpeas, rinsed
  • 1 cup shelled edamame (fresh or thawed if frozen)
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup chopped green bell pepper
  • 1/3 cup finely chopped carrot

Dressing Ingredients

  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon Himalayan sea salt
  • 1 clove garlic, minced
  • 1/2 teaspoon cumin
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon rosemary
  • Pinch of black pepper

Instructions

  1. Prepare the dressing: In a small bowl, whisk together olive oil, balsamic vinegar, Himalayan sea salt, minced garlic, cumin, Italian seasoning, rosemary, and black pepper until well combined.
  2. Set aside the dressing: Stir the dressing once more and set it aside to allow the flavors to meld.
  3. Prepare the chickpeas: Open the can of chickpeas, rinse them thoroughly under cold water, and drain well. Transfer the chickpeas to a large mixing bowl.
  4. Add edamame: Measure out 3/4 cup of shelled edamame and add it to the bowl with the chickpeas.
  5. Chop and add vegetables: Finely chop the carrot (about 1/3 cup), red bell pepper (1/4 cup), and green bell pepper (1/4 cup), then add these to the bowl with the chickpeas and edamame.
  6. Toss with dressing: Pour the prepared dressing over the chickpeas, edamame, and vegetables. Toss everything thoroughly to ensure the salad is evenly coated with the dressing.
  7. Chill and serve: Place the bowl of salad into the refrigerator and let it chill for at least 1 hour to allow the flavors to develop fully. Serve chilled and enjoy your fresh Chickpea and Edamame Salad!
