This Chicken Sausage White Bean Skillet is a quick and hearty one-pan meal combining savory chicken sausage, creamy cannellini beans, and fresh spinach. Ready in just 25 minutes, it's perfect for a nutritious weeknight dinner that’s packed with flavor and texture.

Ingredients

Protein

  • 4 fully-cooked chicken sausage links (about 12 oz.)

Vegetables & Aromatics

  • 1 small yellow onion, diced
  • 2 cloves of garlic, minced
  • 2 cups spinach, roughly chopped

Pantry & Seasonings

  • 2 15oz. cans cannellini beans, drained
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 1/4 tsp smoked paprika
  • 1/4 tsp freshly cracked black pepper
  • 1 cup chicken broth
  • 2 Tbsp cooking oil, divided

Instructions

  1. Slice the Sausage: Slice the chicken sausage into round medallions about ¼ - ½ inch thick to ensure even browning and quick cooking.
  2. Brown the Sausage: Heat a large skillet over medium heat and add 1 Tbsp of cooking oil. Add the sliced chicken sausage and brown on both sides for about 1-2 minutes per side, being careful not to burn them. Remove the browned sausage from the skillet and set aside.
  3. Sauté Onion and Garlic: In the same skillet, add the remaining 1 Tbsp of oil, then add diced onion and minced garlic. Sauté for about 3 minutes until the onion is translucent and the garlic is fragrant, creating a flavorful base.
  4. Add Beans and Seasonings: Add the drained cannellini beans along with salt, dried oregano, smoked paprika, and freshly cracked black pepper to the skillet. Pour in the chicken broth to bring everything together.
  5. Simmer the Mixture: Stir gently to combine and bring the skillet to a simmer. Let it cook for 4-5 minutes to allow the flavors to meld and the sauce to slightly thicken.
  6. Add Spinach and Sausage: Stir in the roughly chopped spinach to wilt it down, then return the browned chicken sausage to the skillet. Gently mix everything to combine evenly.
  7. Serve: Serve the skillet mixture hot, optionally with crusty bread and a sprinkle of freshly cracked black pepper or red pepper flakes for a bit of heat. Enjoy this hearty and flavorful dish!

Notes

  • Leaving the starchy liquid on the beans helps create a thicker, more flavorful sauce.
  • Use pre-cooked chicken sausage to keep the cooking time short and simple.
  • Feel free to substitute spinach with kale or Swiss chard for a different greens variation.
  • Serve with crusty bread or a green salad for a complete meal.
  • Adjust seasoning to taste, adding more smoked paprika or fresh herbs if desired.
