Ingredients

For the Chicken Crust

  • 1 lb ground chicken
  • 1 large egg
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Toppings

  • ½ cup pizza sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup diced green bell pepper (about ½ medium pepper)
  • ¼ cup tame or pickled jalapeños (drained and patted dry)
  • Fresh basil leaves (optional, for garnish)
  • Crushed red pepper (optional, for garnish)

Instructions

  1. Preheat the Oven: Set your oven to 400°F and line a round pizza pan or baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Prepare the Chicken Crust Mixture: In a mixing bowl, combine the ground chicken, egg, Parmesan cheese, Italian seasoning, onion powder, garlic powder, salt, and black pepper. Mix thoroughly until all ingredients are evenly incorporated to form a cohesive dough.
  3. Form the Crust: Spread the chicken mixture evenly into a thin circular shape about 10–12 inches in diameter on the prepared pan. Use damp hands or a spatula to smooth the edges for a uniform crust.
  4. Bake the Crust: Place the crust in the preheated oven and bake for 22–25 minutes until the crust is cooked through and the edges turn golden brown. If you notice moisture pooling on the crust’s surface, gently blot it with a paper towel to remove excess liquid.
  5. Add the Toppings: Increase the oven temperature to 425°F. Spread the pizza sauce evenly over the baked chicken crust. Sprinkle half of the shredded mozzarella cheese over the sauce, followed by the diced green bell pepper and jalapeños. Top with the remaining mozzarella cheese.
  6. Bake the Pizza: Return the pizza to the oven and bake for an additional 8–10 minutes until the cheese is melted and bubbly. For extra crispiness, broil the pizza for the last 2 minutes, watching carefully to prevent burning.
  7. Rest and Serve: Allow the pizza to rest for 3–5 minutes after baking to help it hold together when sliced. Garnish with fresh basil leaves and a sprinkle of crushed red pepper, if desired, before serving.

Notes

  • Blot excess moisture from the crust after baking to prevent sogginess.
  • Broiling at the end is optional but adds a nice crisp and golden top.
  • Use damp hands when shaping the crust to prevent sticking.
  • Adjust toppings to your preference; other vegetables or meats can be added.
  • Letting the pizza rest before slicing helps maintain its structure.
