Ingredients

Chicken and Noodles

  • 1/2 bunch green onions, chopped
  • 2 garlic cloves, pressed or minced

Chow Mein Sauce

  • 4 Tbsp oyster sauce (or adjust to taste)
  • 3 Tbsp low sodium soy sauce
  • 3 Tbsp light sesame oil (not toasted)
  • 1/2 cup chicken broth
  • 1 Tbsp cornstarch
  • 1 Tbsp granulated sugar

Instructions

  1. Prepare the chow mein sauce: In a small mixing bowl, whisk together oyster sauce, granulated sugar, sesame oil, soy sauce, chicken broth, and cornstarch until fully combined and smooth. Set aside.
  2. Cook the noodles: Boil the chow mein noodles according to the package instructions. Once cooked, drain them and rinse under cold water to stop cooking. Set aside.
  3. Cook the chicken: Heat a large wok or skillet over medium heat and add 3 tablespoons of oil. Cut the chicken breasts into bite-sized strips. Add the chicken to the hot oil and cook, stirring occasionally, until the pieces turn golden brown and are cooked through. Remove the chicken from the pan and set aside.
  4. Sauté the vegetables: In the same pan, add the julienned carrots, chopped cabbage, and pressed garlic. Sauté for a few minutes until the vegetables are slightly softened and the cabbage becomes translucent, stirring occasionally.
  5. Combine and finish cooking: Return the cooked chicken and noodles to the pan with the vegetables. Pour the prepared chow mein sauce over everything and toss gently to coat. Continue cooking for an additional 2 minutes, allowing the sauce to thicken and all ingredients to blend flavors.
  6. Garnish and serve: Remove from heat, sprinkle chopped green onions on top for freshness and crunch, and serve the chicken chow mein hot directly from the pan.
