A refreshing and hearty Chicken Caesar Pasta Salad combining whole wheat fusilli, tender chicken breast, crisp romaine lettuce, juicy cherry tomatoes, crunchy croutons, and Parmesan cheese, all tossed in a creamy homemade Caesar dressing. Perfect for a quick, nutritious meal served cold or at room temperature.

Ingredients

Pasta and Protein

  • 8 ounces whole wheat fusilli pasta (or your favorite pasta shape)
  • 12 ounces chicken breast

Vegetables and Add-ins

  • 1 romaine lettuce heart, chopped (about 8 ounces)
  • 1 pint cherry tomatoes (or grape tomatoes), halved
  • 3/4 cup croutons
  • 1/3 cup freshly grated Parmesan cheese

Dressing

  • 1 batch Homemade Caesar Dressing (recipe or store-bought equivalent)

Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a boil. Add the whole wheat fusilli and cook according to the package instructions until al dente. Drain the pasta using a colander and rinse under cold water to stop the cooking process. Shake off excess water thoroughly and set the pasta aside to cool.
  2. Prepare the Chicken: Cut leftover cooked chicken breast into bite-sized pieces. If cooking fresh chicken, cook the breasts thoroughly by your preferred method, then shred or dice for the salad.
  3. Make the Dressing: Prepare the Homemade Caesar Dressing if you’re making it yourself, or use a good quality store-bought dressing to keep things simple.
  4. Assemble the Salad: Once the pasta has cooled, shake it again to remove any remaining moisture. Add it to a large serving bowl. Top with the bite-sized chicken pieces, chopped romaine lettuce, halved cherry tomatoes, croutons, and freshly grated Parmesan cheese.
  5. Toss and Serve: Drizzle the Caesar dressing over the salad ingredients and toss gently to combine everything evenly. Serve the salad chilled or at room temperature for best flavor.

Notes

  • You can substitute the whole wheat pasta with any pasta shape you prefer.
  • Use leftover cooked chicken to save time or cook fresh chicken breasts as needed.
  • The salad tastes best when served cold or at room temperature.
  • For a lighter version, reduce the amount of croutons or Parmesan cheese.
  • Homemade Caesar dressing allows customization of flavors, but store-bought versions work well too.
