Delicious and nutritious Cherry Overnight Oats combining fresh or frozen cherries blended with creamy Greek yogurt, almond milk, and chia seeds. This easy no-cook recipe is perfect for a quick, healthy breakfast that’s naturally sweetened with maple syrup and infused with vanilla bean paste. Refrigerated overnight, it develops a creamy texture and rich cherry flavor, topped with extra yogurt and fresh cherries for a refreshing finish.

Ingredients

Main Ingredients

  • 1 cup cherries (fresh or frozen, pips removed)
  • 2 teaspoons lemon juice
  • 1 cup almond milk or milk of choice
  • ½ cup Greek style yoghurt
  • 1-2 tablespoons maple syrup
  • 1 teaspoon vanilla bean paste
  • 1 cup rolled oats
  • 1 tablespoon chia seeds
  • Pinch of salt

Topping

  • ½ cup Greek style yoghurt
  • Fresh cherries

Instructions

  1. Blend Cherries: If using frozen cherries, defrost them first. Add cherries and lemon juice to a food processor or blender and blend until mostly liquid, allowing a few small cherry pieces to remain for texture.
  2. Mix Wet Ingredients: In a bowl, combine the almond milk, ½ cup Greek yoghurt, blended cherries, maple syrup, vanilla bean paste, and a pinch of salt. Stir until evenly mixed.
  3. Add Dry Ingredients and Stir: Incorporate the rolled oats and chia seeds into the wet mixture. Stir well to combine, then let sit for 5 minutes before stirring again to prevent chia seed clumping.
  4. Refrigerate Overnight: Cover the bowl or divide the mixture into jars. Refrigerate for at least 4 hours or overnight to allow oats and chia seeds to soften and absorb the flavors.
  5. Serve: Spoon the soaked overnight oats into two glasses or bowls. Top each serving with the remaining Greek yoghurt and fresh cherries for garnish. Enjoy chilled.

Notes

  • Use fresh or frozen cherries depending on availability; just ensure frozen are defrosted for blending.
  • Maple syrup amount can be adjusted based on desired sweetness.
  • Can be made dairy-free by substituting Greek yogurt with a plant-based alternative.
  • Prepare in jars for an easy grab-and-go breakfast option.
  • Chia seeds help thicken the mixture and add nutritional benefits like fiber and omega-3 fatty acids.
