This Cheesy Baked Broccoli Gnocchi is a comforting and easy-to-make casserole combining pillowy gnocchi, tender broccoli florets, and a creamy, cheesy sauce baked to golden perfection. It’s perfect for a weeknight dinner or a cozy meal that brings together simple ingredients with rich flavors and a delightful gooey texture.

Ingredients

Main Ingredients

  • 1 lb Gnocchi
  • 3 cups Broccoli Florets
  • 1 cup Chicken or Vegetable Broth
  • 1/2 teaspoon Garlic Powder
  • 1/4 teaspoon Onion Powder
  • 1/4-1/2 teaspoon Red Pepper Flakes
  • Salt and Pepper to taste
  • 4 oz Cream Cheese, cubed
  • 2 cups Shredded Mozzarella Cheese, divided

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the dish later.
  2. Pre-Cook Broccoli and Gnocchi: Bring a large pot of salted water to a boil. Add the broccoli florets and gnocchi and simmer gently for about 3 minutes until tender. Drain the water thoroughly and set the vegetables and gnocchi aside.
  3. Make Cheese Sauce: Heat a large ovenproof skillet over medium-high heat and add the chicken or vegetable broth, bringing it to a simmer. Add the cubed cream cheese and stir continuously until mostly melted and mixed with the broth. It’s fine if small bits remain as they will melt during baking. Stir in half of the shredded mozzarella cheese (1 cup), garlic powder, onion powder, red pepper flakes, and a pinch of salt and pepper until the cheese is melted and the sauce is mostly smooth. Remove from the heat.
  4. Add Broccoli and Gnocchi: Gently fold the pre-cooked broccoli and gnocchi into the creamy cheese sauce within the skillet, making sure everything is evenly coated. Then sprinkle the remaining 1 cup of mozzarella cheese evenly over the top to create a cheesy crust.
  5. Bake: Place the skillet in the preheated oven and bake for approximately 15 minutes, or until the cheese sauce is bubbly and the topping is golden brown. For an extra kick, optionally sprinkle with additional red pepper flakes before serving.

Notes

  • You can substitute vegetable broth instead of chicken broth to keep this dish vegetarian-friendly.
  • Use fresh broccoli florets for best texture, but frozen can be used if thawed and drained adequately.
  • The red pepper flakes are optional and can be adjusted to your heat preference.
  • To make it gluten-free, ensure the gnocchi you use is gluten-free certified.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
