Cheese Hotteok are delicious Korean stuffed pancakes filled with gooey melted cheese. Made with a mix of plain and glutinous rice flour, these pancakes have a crispy golden crust and a soft, chewy interior. The dough is allowed to rise twice, then filled with shredded cheese and pan-fried to perfection. Perfect as a savory snack or comfort food, these pancakes are easy to prepare and delightfully cheesy.

Ingredients

Dough Ingredients

  • 300g plain flour
  • 100g glutinous rice flour
  • 12g instant yeast
  • 40g granulated sugar
  • 1/4 teaspoon salt
  • 2 tablespoons vegetable oil
  • 320ml whole milk, warm

Filling

  • Shredded cheese (approx. 150-200g, mozzarella or any preferred type)

Cooking

  • Vegetable oil for frying (amount as needed, enough to generously coat pan)

Instructions

  1. Prepare the dough: In a large bowl, whisk together the plain flour, glutinous rice flour, instant yeast, sugar, and salt until combined.
  2. Mix wet ingredients with dry: Add the vegetable oil and warm whole milk to the flour mixture. Stir and mix until a sticky and slightly lumpy dough forms, which is the desired consistency.
  3. First rise: Cover the dough and let it rise in a warm place for 1-2 hours, or until it has doubled in size.
  4. Second rise: After the dough has doubled, gently mix it, then cover again and let it rest for an additional 30 minutes.
  5. Divide and fill dough: Divide the dough into portions of approximately 100g each. Flatten each piece with your hands, place a generous amount of shredded cheese in the center, then fold the edges over and pinch to seal completely, forming a smooth ball with the cheese enclosed.
  6. Heat the pan: Generously add vegetable oil to a frying pan and heat over medium heat until hot.
  7. Cook the pancakes: Place 2-3 dough balls seam side down in the pan, leaving enough space to flip. Slightly press them down with a spatula to flatten. Cook until the bottom is golden brown, then flip and flatten again slightly. Continue cooking until both sides are crispy and golden brown.
  8. Repeat cooking process: Cook remaining dough balls in batches, adding more oil as needed.
  9. Serve warm: Enjoy the Cheese Hotteok while still warm so the cheese inside is melted and gooey.

Notes

  • Using mozzarella cheese gives a nice stretchy texture, but feel free to experiment with other cheeses like cheddar or a mix for added flavor.
  • Keep some extra flour handy while shaping as the dough can be sticky.
  • Ensure the dough is well sealed to avoid cheese leaking out during cooking.
  • If you don’t have glutinous rice flour, you can substitute with additional plain flour, but the texture may be less chewy.
  • Do not overcrowd the pan when frying to ensure even cooking and easy flipping.
