Ingredients
Fritters
½ lb (220 grams) carrots, grated
1 small egg
4 tablespoons all-purpose flour, plus more if needed
Preheat Oven. Preheat the oven to 400℉ (200℃) and grease or line a baking sheet with parchment paper for easy removal and clean-up.
Prepare Carrots. Using a food processor or box grater, grate the carrots finely. Drain and squeeze the grated carrots with a paper towel to remove excess moisture, ensuring the fritters hold together well.
Mix Ingredients. Transfer the drained carrots to a bowl. Add the egg, all-purpose flour, grated garlic, ground cumin, chopped coriander leaves (if using), salt, and black pepper (if using). Mix thoroughly until well combined. Add additional flour if the mixture is too wet and hard to handle.
Shape Fritters. Scoop a heaping tablespoon of the carrot mixture and place it on the prepared baking sheet. Flatten it slightly with your hand to form a fritter shape. Repeat with remaining mixture, spacing fritters evenly.
Bake Fritters. Bake the fritters in the preheated oven for about 12 minutes. Then carefully flip each fritter over and bake for another 12 minutes or until they turn golden brown and crispy on both sides.
Prepare Dip. While the fritters bake, mix the plain yogurt, hummus, and lemon juice in a bowl to create a creamy and tangy yogurt-hummus dip.
Serve. Serve the freshly baked carrot fritters warm with the yogurt-hummus dip on the side. They also taste great cold and can be enjoyed as a snack or light meal.
Notes
If the carrot mixture is too wet and falling apart, add more flour gradually until it holds shape well.
You can omit coriander leaves if you prefer, or substitute with fresh parsley or cilantro.
The fritters can be made ahead and reheated in the oven to restore crispiness.
Adjust seasoning and spices according to taste, adding chili flakes for extra heat if desired.
Use parchment paper on the baking sheet to prevent sticking and for easy clean-up.
These fritters are suitable as a vegetarian snack or appetizer.
