Instructions

  1. Preheat and prepare baking sheets: Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper to prevent sticking and ensure even baking.
  2. Mix dry ingredients: In a small bowl, whisk together the all-purpose flour, ground cardamom, baking soda, and salt until well combined.
  3. Cream butter and sugars: In a large bowl, use electric beaters on medium-high speed to cream the softened unsalted butter, granulated sugar, and dark brown sugar until the mixture is fluffy and light in color.
  4. Add wet ingredients: Beat in the egg, molasses, lemon juice, and vanilla bean paste on high speed until the mixture becomes creamy, light, and just combined.
  5. Combine dry and wet mixtures: Reduce mixer speed to low and slowly add the dry flour mixture to the wet ingredients. Mix until just combined, avoiding overmixing to keep the cookies tender.
  6. Shape the cookies: Using a spring-loaded cookie scoop or spoon, portion the dough into 1 ½ tablespoon-sized balls and place them evenly spaced on the prepared baking sheets.
