Instructions

  1. Roast butternut squash: Toss the cubed butternut squash with olive oil, salt, and pepper. Spread evenly on a baking pan and roast in a preheated 400°F (200°C) oven for 20-30 minutes until tender, stirring halfway through.
  2. Puree squash: Once roasted, transfer the butternut squash to a food processor or blender, add the chicken broth, and puree until smooth to create the base of the sauce.
  3. Cook pasta: Meanwhile, cook the pasta according to package instructions until al dente. Reserve some pasta water before draining.
