A vibrant and flavorful dish featuring tender butter beans simmered with aromatic garlic, smoky spices, fresh lemon juice, and herbs. Perfect as a hearty side or a light main, this recipe combines Mediterranean-inspired flavors for a quick and satisfying meal.

Ingredients

Spices and Seasonings

  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon Urfa pepper (optional)
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • Kosher salt, to taste
  • Black pepper, to taste

Main Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 4 garlic cloves, minced
  • 2 (15-ounce) cans butter beans, drained and rinsed
  • 1 1/2 cups vegetable broth
  • Juice of 2 lemons
  • 2 green onions, trimmed and chopped (both white and green parts)
  • 1/3 cup roughly chopped parsley
  • 1/3 cup roughly chopped dill

Instructions

  1. Toast the seasonings: Heat a large nonstick skillet over medium-high heat and add the olive oil. When the oil shimmers, add the red pepper flakes, Urfa pepper, cumin, smoked paprika, minced garlic, and a generous pinch of salt and black pepper. Stir continuously for 30 seconds to 1 minute, until the garlic is fragrant but not browned, to avoid bitterness.
  2. Simmer the beans: Add the drained and rinsed butter beans into the skillet along with the vegetable broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 5 to 10 minutes, until the beans are heated through and the broth has slightly thickened.
  3. Finish and serve: Turn off the heat and stir in the fresh lemon juice, chopped green onions, parsley, and dill. Serve the beans warm alongside crusty bread, rice, or toss with cooked plain pasta for a wholesome meal.

Notes

  • Urfa pepper adds a subtle smoky heat; if unavailable, you can omit or substitute with smoked paprika extra.
  • Use fresh lemons for the best brightness and acidity in the dish.
  • For a spicier dish, increase the amount of red pepper flakes to your preference.
  • Leftovers keep well in the refrigerator for up to 3 days; reheat gently on the stovetop.
  • This recipe works well as a vegan and vegetarian option, packed with plant-based protein.
