Served in warm corn tortillas with creamy vegan ranch and fresh toppings, these tacos bring a deliciously tangy and spicy taste to your table.

Ingredients

Chickpea Mixture

  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1/2 cup Frank's Buffalo Sauce
  • 2 teaspoons agave syrup (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Taco Assembly

  • 12 small corn tortillas (or flour tortillas)
  • About 1/2 cup vegan ranch dressing
  • Optional toppings: shredded lettuce, diced tomatoes, vegan feta, diced avocado, lime wedges, fresh cilantro

Instructions

  1. Prepare the Chickpeas: In a large sauté pan over medium heat, combine the drained and rinsed chickpeas, buffalo sauce, agave syrup (if using), garlic powder, and onion powder. Cook for about 10 minutes, stirring frequently to allow the chickpeas to absorb the flavors and heat evenly.
  2. Warm the Tortillas and Assemble Tacos: Remove the chickpea mixture from heat. Warm the tortillas in a dry skillet or microwave until pliable. Spoon the buffalo chickpeas onto each tortilla, then top with shredded lettuce, vegan ranch, diced tomatoes, and any other preferred toppings like vegan feta or avocado. Garnish with fresh cilantro and a squeeze of lime if desired. Serve immediately and enjoy your spicy, vegan tacos!

Notes

  • For extra heat, add a pinch of cayenne pepper or hot sauce to the chickpea mixture.
  • Agave syrup is optional but adds a subtle sweetness to balance the spiciness.
  • Use corn tortillas for a gluten-free option; ensure tortillas are warmed for best texture.
  • Vegan ranch dressing can be store-bought or homemade to suit dietary preferences.
  • Fresh toppings like avocado and cilantro add vibrant flavors and textures.
