This vegan and oil-free Buffalo Chickpea Dip is a flavorful, creamy appetizer featuring softened cashews, chickpeas, hot sauce, and vegan yogurt to create a spicy, tangy dip perfect for snacking or serving with veggies and chips. Baked to meld the flavors, it offers a delicious plant-based alternative to traditional buffalo dips.

Ingredients

Cashew Base

  • ½ cup raw, unsalted cashews
  • ½ cup unsweetened vegan yogurt
  • ¼ cup hot sauce (e.g., Frank's Red Hot Sauce)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt

Chickpea Mixture

  • 15 oz can chickpeas (drained and rinsed)

Toppings (Optional)

  • Nutritional yeast
  • Vegan cheese
  • Chives or green onion

Instructions

  1. Soften Cashews: Soften the cashews by soaking them overnight, boiling for 10 minutes, or pouring boiling water over them and letting them soak for 10 minutes. This ensures a creamy blend.
  2. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the dip later.
  3. Blend Cashew Base: Drain the soaked cashews and add them to a blender along with the vegan yogurt, hot sauce, garlic powder, onion powder, and salt. Blend until completely smooth to form the creamy base of the dip.
  4. Add Chickpeas: Drain and rinse the chickpeas, then add them to the blender. Pulse 5 to 10 times to break them down while maintaining some texture for the dip.
  5. Transfer and Bake: Pour the blended mixture into a small baking dish. Optionally, sprinkle with vegan cheese, nutritional yeast, or extra hot sauce. Bake in the preheated oven for 20 minutes to meld flavors and warm the dip.
  6. Serve: Remove the dip from the oven, let it cool slightly, garnish with chopped chives or green onions if desired, and serve with your favorite dippers.

Notes

  • Soaking cashews is key for a creamy texture; boiling water soak is a quick alternative to overnight soaking.
  • You can adjust the level of spiciness by increasing or decreasing the amount of hot sauce.
  • Use unsweetened, plain vegan yogurt to avoid unwanted sweetness.
  • Optional toppings like nutritional yeast and vegan cheese enhance flavor and add depth.
  • This dip can be stored in the refrigerator for up to 3 days in an airtight container.
