This Buffalo Chickpea Dip is a creamy, spicy, and cheesy appetizer perfect for game days or gatherings. It combines tender chickpeas with bold buffalo wing sauce, creamy cheeses, and a hint of smoky spices, baked to bubbly perfection and topped with crunchy spiced chickpeas for added texture.

Ingredients

Main Ingredients

  • 2 (14 ounce) cans chickpeas, drained and rinsed
  • 8 ounces cream cheese, softened
  • ⅔ cup buffalo wing sauce
  • ⅓ cup ranch dressing
  • ⅓ cup blue cheese dressing
  • ¼ cup mayonnaise
  • 2 cups freshly grated sharp cheddar cheese
  • ½ cup crumbled gorgonzola cheese
  • 4 green onions, thinly sliced
  • ⅓ cup chopped fresh cilantro
  • 1 teaspoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the dip.
  2. Prepare Chickpeas: After rinsing the chickpeas, set aside ½ cup on a paper towel and gently pat dry; keep these for frying later.
  3. Mash Chickpeas: Use a fork, meat masher, or potato masher to coarsely mash the remaining chickpeas; this adds a nice texture to the dip.
  4. Mix Creamy Base: In a large bowl, use an electric hand mixer to beat the softened cream cheese until smooth and creamy. Then beat in buffalo wing sauce, ranch dressing, blue cheese dressing, and mayonnaise until fully combined.
  5. Combine Ingredients: Stir the coarsely mashed chickpeas into the creamy mixture. Fold in most of the sharp cheddar cheese, reserving some for topping. Stir in half of the crumbled gorgonzola cheese.
  6. Add Herbs: Stir in half of the sliced green onions and chopped cilantro for fresh flavor.
  7. Assemble Dip: Spread the mixture evenly into an 8 or 9-inch round baking dish. Sprinkle the reserved cheddar and remaining gorgonzola cheese on top.
  8. Bake: Bake the dish for 25 to 30 minutes, or until the dip is bubbly and warm throughout.
  9. Fry Reserved Chickpeas: While the dip bakes, heat olive oil in a skillet over medium heat. Add the reserved chickpeas, sprinkle with garlic powder and smoked paprika, and cook while stirring frequently until the chickpeas are crunchy and fried.
  10. Garnish and Serve: Remove the dip from the oven and top with the remaining green onions, cilantro, and fried chickpeas. Drizzle a little extra buffalo wing sauce over the top. Serve warm with crackers, vegetables, chips, or crostini.

Notes

  • For extra heat, add more buffalo wing sauce or sprinkle with cayenne pepper.
  • You can substitute blue cheese dressing with extra ranch if preferred.
  • Use freshly grated cheese for better melting and flavor.
  • The crispy chickpeas add a wonderful texture contrast—do not skip frying them.
  • Serve immediately after baking and garnishing for best taste and texture.
  • Store leftovers in the refrigerator and reheat before serving.
