Buffalo Chicken Nachos combine spicy buffalo sauce-infused shredded chicken with creamy cheeses and cool ranch, layered over crispy tortilla chips for a perfect crowd-pleasing appetizer or snack in just 15 minutes.

Ingredients

Buffalo Chicken Mixture

  • 1 block (8 ounces) cream cheese, room temperature
  • ¾ cup (205 g) buffalo sauce
  • ¾ cup (180 g) ranch dressing, plus more for topping
  • ½ cup (115 g) sour cream
  • 1 cup (113 g) mild cheddar cheese, shredded
  • 1 cup (113 g) mozzarella cheese, shredded
  • 3 cups (420 g) rotisserie chicken, shredded and diced (about 1 whole chicken)

Assembly and Toppings

  • 1 bag (11 ounces) tortilla chips
  • ¼ cup (56 g) blue cheese crumbles
  • 2 tablespoons green onion, chopped

Instructions

  1. Heat Cream Cheese Mixture: In a large skillet over medium-low heat, combine the cream cheese, buffalo sauce, ranch dressing, and sour cream. Stir continuously until the cream cheese is completely melted and the mixture is smooth.
  2. Add Cheeses: Add the shredded cheddar and mozzarella cheeses to the skillet. Stir the mixture until the cheeses have fully melted and are well incorporated into the sauce.
  3. Incorporate Chicken: Add the shredded and diced rotisserie chicken to the cheesy buffalo sauce mixture. Cook for an additional 3-4 minutes, stirring occasionally, until the chicken is heated through and coated evenly with the sauce.
  4. Prepare Chips: On a large platter or baking sheet, arrange the tortilla chips in an even layer ready for topping.
  5. Assemble Nachos: Pour the hot buffalo chicken mixture evenly over the arranged tortilla chips, making sure to distribute the toppings as best as possible.
  6. Top and Serve: Drizzle additional ranch dressing over the buffalo chicken nachos. Sprinkle blue cheese crumbles and chopped green onions on top for added flavor and garnish. Serve immediately and enjoy!
