Indulge in a deliciously healthy breakfast with these Brownie Batter Overnight Oats. This recipe combines rolled oats, protein powder, cocoa, and almond milk soaked overnight to create a creamy, chocolatey base reminiscent of brownie batter. Topped with crunchy walnuts, rich chocolate chips, and a drizzle of peanut butter, these overnight oats feel decadent while providing a nutritious start to your day.

Ingredients

Base Ingredients

  • 1 cup old fashioned rolled oats
  • 2 scoops (50 grams) protein powder, vanilla or chocolate
  • 2 cups unsweetened vanilla almond milk
  • 2 Tablespoons cocoa powder
  • 1 Tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Toppings

  • 2 Tablespoons chocolate chips (preferably Lily’s dark chocolate chips)
  • 2 Tablespoons chopped walnuts
  • 1 Tablespoon peanut butter (optional)

Instructions

  1. Combine Ingredients: In a bowl or jar, add the rolled oats, protein powder, almond milk, cocoa powder, maple syrup, vanilla extract, and sea salt. Stir well until all the protein powder is fully dissolved and the ingredients are evenly mixed.
  2. Refrigerate Overnight: Seal the container with a lid and place it in the refrigerator for at least 8 hours or overnight, allowing the oats to soak up the liquid and flavors to meld.
  3. Prepare to Serve: The next morning, remove the container from the fridge and stir the oats. If the mixture is too thick, add a splash of almond milk to loosen it before serving.
  4. Portion and Add Toppings: Divide the overnight oats evenly into two serving containers or bowls. Top each portion with chocolate chips, chopped walnuts, and a drizzle of peanut butter if desired.
  5. Enjoy: Serve immediately and enjoy a nutritious breakfast that tastes like brownie batter!

Notes

  • For added sweetness, adjust the maple syrup amount to your preference.
  • You can substitute walnuts with other nuts like pecans or almonds.
  • Use dairy milk or other plant-based milks if preferred.
  • Peanut butter is optional but adds extra creaminess and protein.
  • Make sure to stir well before refrigerating to avoid clumps of protein powder.
  • Overnight oats can be stored covered in the refrigerator for up to 3 days.
