A warm and comforting brothy rice bowl featuring a flavorful vegetable broth infused with ginger, garlic, and red onion, topped with pan-fried vegetable dumplings and bok choy. This easy-to-make dish combines fragrant jasmine or sushi rice with savory broth and crunchy, tender toppings for a perfect cozy meal.

Ingredients

For the Broth

  • 1 thumb ginger, fresh, sliced into chunks
  • 3 cloves garlic, smashed
  • 1 red onion, small, cut into chunks
  • 6 cups vegetable broth
  • 1 tbsp soy sauce (use tamari if gluten-free)
  • 1 tbsp rice vinegar
  • 1 tbsp toasted sesame oil, optional

Toppings

  • 4 baby bok choy, halved or quartered
  • 12 vegetable dumplings, pan fried or steamed separately
  • 4 cups cooked rice (jasmine or sushi rice recommended)
  • Green onion tops, sliced (for garnish)
  • 2 tbsp toasted sesame seeds
  • Chili crisp or chili oil, optional

Instructions

  1. Prepare the Broth: In a large pot over medium heat, add the sliced ginger, smashed garlic, and red onion chunks. Pour in the vegetable broth, soy sauce, and rice vinegar. Bring the mixture to a gentle simmer, then cover and let it cook for 10 to 12 minutes to allow the flavors to infuse.
  2. Cook the Toppings: While the broth simmers, heat a pan over medium heat and add one teaspoon of oil. Pan-fry the vegetable dumplings and baby bok choy until they are slightly browned and cooked through, about 3 to 5 minutes.
  3. Strain the Broth: Strain the broth through a fine mesh sieve or cheesecloth into a clean pot or bowl to remove the solids. Alternatively, you can scoop out the broth as needed when serving. Stir in toasted sesame oil to taste, if desired.
  4. Assemble the Bowls: Place about 1 cup of warm cooked jasmine or sushi rice into each serving bowl. Neatly arrange the pan-fried bok choy and dumplings on top of the rice.
  5. Serve and Garnish: Pour the hot broth over the rice and toppings. Finish each bowl by sprinkling sliced green onion tops, toasted sesame seeds, and a drizzle of chili crisp or chili oil if you like a spicy kick. Enjoy warm.

Notes

  • Use tamari instead of soy sauce to make this recipe gluten-free.
  • You can steam the dumplings instead of pan-frying if preferred.
  • Adjust the amount of chili oil or chili crisp according to your spice tolerance.
  • For added protein, serve with a boiled or poached egg, if not strictly vegetarian.
  • Leftover broth can be refrigerated for up to 3 days and reheated before serving.
