A simple and delicious Blueberry Overnight Oats recipe featuring fresh blueberry compote sweetened with maple syrup, combined with rolled oats, chia seeds, Greek yogurt, and a hint of vanilla. This make-ahead, no-cook breakfast is creamy, nutritious, and perfect for busy mornings.

Ingredients

Blueberry Compote

  • 2 cups blueberries (fresh or frozen)
  • 2 tablespoons maple syrup

Overnight Oats

  • 2 cups old-fashioned rolled oats
  • 4 tablespoons chia seeds
  • 3 cups water or milk
  • 4 tablespoons maple syrup
  • 1 cup Greek yogurt (vanilla or blueberry yogurt)
  • 2-3 teaspoons vanilla bean paste
  • 1 pinch salt

Instructions

  1. Prepare Blueberry Layer: Place blueberries and 2 tablespoons of maple syrup in a small saucepan. Cook over medium heat for 1 minute until blueberries start to soften and release their juices. Mash lightly with a spoon if you prefer a smoother texture. Remove from heat and let cool completely. Once cooled, store in the refrigerator until ready to serve.
  2. Mix Overnight Oats: In a large bowl, combine rolled oats, chia seeds, water or milk, 4 tablespoons of maple syrup, Greek yogurt, vanilla bean paste, and a pinch of salt. Stir thoroughly until all ingredients are well incorporated.
  3. Refrigerate: Cover the bowl with a lid or plastic wrap and refrigerate for at least 3 hours or ideally overnight. This allows the oats and chia seeds to absorb moisture and soften into a creamy consistency.
  4. Assemble and Serve: In individual mason jars or small glasses, spoon a layer of the blueberry compote first, then top with the prepared overnight oats. Add any additional toppings of your choice like nuts, seeds, or fresh fruit before serving.

Notes

  • You can use fresh or frozen blueberries according to availability.
  • Adjust the sweetness by modifying the amount of maple syrup in both the compote and oats.
  • Milk can be substituted with any plant-based milk for a dairy-free option.
  • For thicker oats, reduce the liquid slightly or add more chia seeds.
  • Vanilla bean paste can be replaced with vanilla extract if unavailable.
  • Store leftovers covered in the fridge for up to 3 days.
