Ingredients

Dry Ingredients

  • 1 cup flour (120g) (whole grain spelt, white flour, all-purpose gluten free, or oat flour)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon (or a pinch of ground cardamom, optional)

Wet Ingredients

  • 1/4 cup water (60g)
  • 1 tsp white vinegar or apple cider vinegar (5g)
  • 1/4 tsp vanilla bean paste (1g)
  • 1/3 cup pure maple syrup or honey (80g)
  • 3 tbsp oil (36g) (or substitute with applesauce or banana for fat-free option)

Fruit

  • 1/2 cup blueberries (60g)

Instructions

  1. Prepare the Pan and Oven: Grease a donut pan thoroughly to prevent sticking. Preheat the oven to 350°F (176°C) to ensure even baking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, salt, and optional spices like cinnamon or cardamom. Stir well to distribute all dry ingredients evenly.
  3. Add Wet Ingredients: Pour in the water, maple syrup (or honey), vinegar, oil, and vanilla bean paste into the dry mixture. Mix gently until the batter is just combined; avoid overmixing.
  4. Incorporate Blueberries: Carefully fold in the blueberries to the batter, taking care not to burst them. Alternatively, you can press blueberries into each donut mold right before baking.
  5. Fill the Donut Pan: Spoon the batter into each donut cavity, filling them about two-thirds full to allow room for rising.
  6. Bake the Donuts: Place the donut pan in the center rack of the preheated oven. Bake for 10 minutes or until the donuts are light, fluffy, and fully cooked through the center.
  7. Cool and Remove: Allow the donuts to cool slightly. Then, run a knife around the edges of each mold to loosen the donuts and carefully remove them onto a serving plate.
  8. Frost and Serve: Apply your choice of frosting or enjoy the donuts plain. Recommended frostings can complement the blueberry flavor nicely.
  9. Storage: Store any leftover donuts loosely covered at room temperature overnight or covered in the refrigerator for up to five days. They can also be frozen for up to three months.
