Ingredients

Coleslaw

  • 1/3 cup mayonnaise
  • 1/2 Tbsp honey
  • 1 tsp Dijon mustard
  • 1 tsp red wine vinegar
  • 1/4 tsp salt
  • Freshly cracked pepper, to taste
  • 1/2 bag coleslaw mix (shredded cabbage and carrots)
  • 3 green onions, sliced

Smoky Garlic Lime Sauce

  • 1/3 cup mayonnaise
  • 1/8 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/8 tsp salt
  • 1 lime (1 Tbsp juice)

Blackening Seasoning

  • 1 Tbsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • 1/4 tsp cayenne
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • Freshly cracked pepper, to taste

Tacos

  • 1/2 lb peeled and deveined shrimp (30/40 count)
  • 1 Tbsp butter
  • 1 clove garlic, minced
  • 6 small corn tortillas
  • 3 green onions, sliced

Instructions

  1. Prepare coleslaw dressing: In a bowl, mix mayonnaise, honey, Dijon mustard, red wine vinegar, salt, and freshly cracked pepper. Place coleslaw mix and sliced green onions in a large bowl, add about 3/4 of the dressing, and stir until well coated. Add more dressing if desired. Refrigerate until ready to serve.
  2. Make smoky garlic lime sauce: In a small bowl, combine mayonnaise, garlic powder, smoked paprika, salt, and the juice of half a lime (about 1 Tbsp). Reserve the other half of the lime as wedges for serving.
  3. Toast tortillas: Heat a dry skillet over medium heat. Toast tortillas on each side until edges are browned. Stack toasted tortillas on a plate and cover with a towel to keep warm.
  4. Prepare blackening seasoning: In a bowl, stir together smoked paprika, dried thyme, dried oregano, cumin, cayenne, garlic powder, onion powder, salt, and freshly cracked pepper. Coat the shrimp evenly with this seasoning.
  5. Cook shrimp: In a large skillet, melt butter over medium heat. Add minced garlic and cook about 1 minute until fragrant and softened. Add seasoned shrimp and sauté 3-5 minutes until shrimp are firm and cooked through. Remove from heat to avoid overcooking.
  6. Assemble tacos: Place about 1/4 cup coleslaw on each tortilla, top with 3 shrimp, a drizzle of smoky garlic lime sauce, and sliced green onions. Squeeze a lime wedge over each taco before serving.

Notes

  • Use fresh lime juice for the best flavor in the sauce and as a garnish.
  • Adjust the cayenne pepper in the blackening seasoning for desired heat level.
