Ingredients

For the Tuna and Marinade

  • 2 (6 ounces each) fresh Ahi Tuna Steaks
  • 2 tablespoons vegetable oil
  • ¼ cup balsamic vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • ½ teaspoon salt (for marinade)

For the Blackening Spice Mix

  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon salt (for seasoning)
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Pat Dry and Prepare Tuna: Pat dry the ahi tuna steaks thoroughly with paper towels to remove excess moisture, then place them in a large plastic zip-top bag to prepare for marinating.
  2. Make Marinade & Reserve Half: In a small bowl, whisk together balsamic vinegar, olive oil, honey, and ½ teaspoon salt until combined. Remove half of this marinade and set it aside in a small serving bowl for later use as a sauce.
  3. Marinate the Tuna: Pour the remaining marinade into the plastic bag with the tuna steaks. Seal the bag and gently massage to ensure the tuna is fully coated. Let stand at room temperature for 10 minutes, or refrigerate overnight for deeper flavor.
  4. Mix Blackening Spices: While the tuna marinates, combine paprika, cayenne pepper, garlic powder, thyme, oregano, ½ teaspoon salt, and black pepper in a small bowl to create the blackening seasoning blend.
  5. Season the Tuna: Remove the tuna steaks from the marinade and carefully sprinkle the blackening spice mix evenly over all sides, pressing gently to adhere the spices to the surface.
  6. Heat Skillet: Heat a cast iron skillet over medium-high heat until it becomes smoking hot. Add 2 tablespoons of vegetable oil to the pan to coat the surface and prevent sticking.
  7. Sear Tuna Steaks: Place the seasoned tuna steaks in the hot skillet and cook for about 2 minutes on each side, aiming for a medium-rare finish where the outside is blackened and the center remains tender and pink.
  8. Rest the Steaks: Transfer the cooked tuna steaks onto a cutting board and let them rest for 3 to 5 minutes to redistribute the juices and ensure optimal texture.
  9. Slice and Serve: Thinly slice the rested tuna steaks across the grain and arrange them on plates. Serve immediately alongside the reserved balsamic sauce for dipping or drizzling.

Notes

  • For more intense flavor, marinate the tuna steaks overnight in the refrigerator.
  • Use a smoking-hot cast iron skillet to achieve a perfect blackened crust without overcooking the tuna.
  • Be careful not to overcook tuna; medium-rare keeps it moist and tender.
  • The reserved marinade makes a great tangy sauce that complements the smoky, spicy tuna.
  • Adjust cayenne pepper amount to your preferred spice level.
