Ingredients

Main Ingredients

  • 8 oz Biscoff cookies
  • 2 tbsp Biscoff spread
  • 6 tbsp cream cheese, softened

Coating

  • 2 cups gold chocolate
  • 2 tbsp Biscoff spread
  • 1 Biscoff cookie, crumbled

Instructions

  1. Crush Cookies: Place the Biscoff cookies in a food processor and pulse until finely crushed into crumbs.
  2. Combine Ingredients: Add the Biscoff spread and softened cream cheese to the crumbs, pulsing the processor until the mixture is smooth and fully combined.
  3. Form Truffles: Scoop out the mixture and roll it into small balls approximately 1 inch in diameter.
  4. Chill Mixture: Arrange the truffle balls on a parchment-lined tray and chill them in the refrigerator for 30 minutes to firm up.
  5. Melt Chocolate: Place the gold chocolate in a microwave-safe bowl and heat at 50% power for 30 seconds, stirring well. Continue microwaving in 15 to 20 second intervals, stirring between each, until the chocolate is completely smooth.
  6. Add Biscoff Spread to Chocolate: Stir 2 tablespoons of Biscoff spread into the melted gold chocolate to enhance flavor and texture.
  7. Dip Truffles: Dip each chilled truffle ball into the chocolate mixture, ensuring it is evenly coated.
  8. Decorate: Place the coated truffles back onto the parchment-lined tray and sprinkle the tops with crumbled Biscoff cookie for added crunch and decoration.
  9. Final Chill: Chill the truffles until the chocolate coating is set and firm. Serve chilled for best texture and taste.

Notes

  • Make sure the cream cheese is softened to ensure smooth mixing.
  • Use gold chocolate for a shiny, elegant coating; white or milk chocolate can be substituted but will alter flavor and appearance.
  • Chilling times are important to keep the truffles from becoming too soft during dipping and setting.
  • Store truffles in an airtight container in the refrigerator for up to one week.
