Delicious and nutritious beet muffins specially made for babies, featuring natural sweetness from banana and earthy flavor from cooked beets. These mini muffins are wholesome, gluten-free, and packed with healthy ingredients perfect for little ones.

Ingredients

Wet Ingredients

  • 1 banana (ripe)
  • 2 eggs
  • 1/2 cup cooked beets (steamed or roasted - heaped 1/2 cup / 80g)
  • 1 tbsp coconut oil

Dry Ingredients

  • 1/2 cup oat flour
  • 1 tbsp flaxseed meal (or flour)
  • 1 tsp cinnamon
  • 1 tsp baking powder

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 356°F (180°C) and grease a mini muffin tin to prevent the muffins from sticking during baking.
  2. Blend Wet Ingredients: Add the cooked beets, coconut oil, ripe banana, and eggs to a blender and blend until you achieve a smooth, uniform mixture without lumps.
  3. Mix Dry Ingredients: In a separate mixing bowl, combine the oat flour, flaxseed meal (or flour), cinnamon, and baking powder. Stir these ingredients well.
  4. Combine Mixtures: Pour the blended wet ingredients into the bowl with the dry ingredients and mix thoroughly until just combined, forming a consistent batter.
  5. Portion the Batter: Divide the batter evenly into 12 mini muffin cups or 6 regular-sized muffin cups, depending on your preference.
  6. Bake the Muffins: Bake in the preheated oven until a toothpick inserted into the center emerges clean. This should take about 15 minutes for mini muffins or 20 minutes for regular-sized muffins.

Notes

  • You can steam or roast beets prior to using them; both methods work well.
  • Use ripe bananas for natural sweetness and better texture.
  • Flaxseed meal can be substituted with flaxseed flour if needed.
  • Ensure the mini muffin tin is greased well to prevent sticking.
  • These muffins are suitable for babies who have been introduced to eggs and other included ingredients.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
