These BBQ Ranch Chickpea Pitas are a quick and flavorful vegetarian meal, combining crispy, smoky chickpeas with creamy ranch and tangy pickled onions inside soft pita bread. Perfect for a satisfying lunch or light dinner, they come together in just 30 minutes and serve 4 people.

Ingredients

Chickpea Mixture

  • 2 tablespoons olive oil
  • 2 (14 ounce) cans chickpeas, drained and rinsed
  • ½ teaspoon garlic powder
  • Kosher salt and pepper, to taste
  • ½ cup your favorite BBQ sauce, plus more for serving

For Assembling

  • ⅓ cup ranch dressing
  • 4 to 6 pita breads
  • Romaine lettuce leaves
  • Freshly grated cheddar cheese
  • Fresh chopped chives
  • Pickled onions

Instructions

  1. Prep Ahead: You can make the pickled onions and ranch dressing a few days ahead and store them in the fridge. If making pita bread from scratch, prepare it a day or two beforehand for best texture.
  2. Cook Chickpeas: Heat olive oil in a skillet over medium heat. Add the drained chickpeas along with garlic powder, salt, and pepper. Cook, stirring often, until the chickpeas are warmed through and start to pop and lightly fry, about 5-7 minutes. Stir in the BBQ sauce and cook for an additional 1-2 minutes to coat evenly and heat through.
  3. Assemble Pitas: Warm the pita breads if desired. Place a romaine lettuce leaf on each pita, then spoon on a generous amount of the BBQ chickpeas. Sprinkle with freshly grated cheddar cheese and drizzle with ranch dressing. Top with fresh chopped chives and pickled onions for added flavor and crunch.
  4. Serve: Serve the pitas immediately while warm, with extra BBQ sauce on the side if desired.

Notes

  • Pickled onions and ranch dressing can be prepared up to 3 days in advance and refrigerated.
  • For a vegan option, substitute ranch dressing and cheddar cheese with plant-based alternatives.
  • Feel free to experiment with different BBQ sauces to vary flavor profiles.
  • Serving warm pita bread enhances the texture and flavor of the pitas.
  • If you prefer a spicier kick, add some chili powder or hot sauce to the chickpeas during cooking.
