Ingredients

For the Sauce

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce (Frank's recommended)
  • 1 tablespoon hot sauce (Sriracha recommended)
  • 2 tablespoons honey
  • Salt and pepper to taste

For the Chicken

  • 4 boneless, skinless chicken breasts, cut into small chunks
  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • 1 cup buttermilk (use more if batter is too thick)
  • 1 tablespoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon pepper (or to taste)
  • 1 tablespoon hot sauce (Sriracha recommended)
  • 1 large egg
  • 1 cup Panko breadcrumbs
  • Vegetable oil for frying

Instructions

  1. Prepare the sauce: In a bowl, thoroughly mix the mayonnaise, sweet chili sauce, hot sauce, honey, salt, and pepper. Refrigerate the sauce until you are ready to serve.
  2. Make the batter and coat chicken: In a medium bowl, combine the flour, cornstarch, garlic powder, smoked paprika, salt, and pepper. Add the hot sauce, egg, and buttermilk. Whisk everything until you achieve a smooth batter. Add the chicken pieces to the batter and toss to ensure each chunk is evenly coated. Set aside.
  3. Coat with breadcrumbs: Place the Panko breadcrumbs into another bowl. Take each battered chicken piece and coat it thoroughly in the breadcrumbs. Add more breadcrumbs as necessary to achieve a good coating.
  4. Fry the chicken: Pour about ½ inch of vegetable oil into a large skillet and heat over medium-high heat. Once hot, add a few pieces of chicken at a time—do not overcrowd. Fry for about 3 minutes on each side or until golden brown and cooked through. Use a paper towel-lined plate to absorb excess oil after frying. Repeat with remaining pieces.
  5. Serve: Arrange the chicken bites on a serving dish, drizzle generously with the prepared Bang Bang sauce, and serve immediately while hot and crispy.

Notes

  • Sauce Variations: Adjust the spice level by increasing or decreasing the amount of hot sauce. Adding garlic powder to the sauce is a great way to add extra flavor.
  • Chicken Cuts: Boneless, skinless chicken breasts are used here, but chicken thighs can be substituted for a juicier texture. Adjust cooking times accordingly.
  • Breadcrumb Substitutes: If Panko is unavailable, regular breadcrumbs or crushed cornflakes can be used, but the texture might be slightly different.
  • Oil Temperature: Make sure the oil is hot enough before frying. Test by dropping a small piece of batter into the oil—if it sizzles immediately, the temperature is correct.
  • Make-Ahead Tips: The sauce can be made up to 3 days in advance and stored in the fridge. The chicken can be coated and refrigerated up to 4 hours before frying.
