Ingredients

Banana Bread Donuts

  • 1 cup + 2 tablespoons all-purpose baking flour
  • 1/2 cup dark brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 cup very ripe bananas, mashed
  • 2 1/2 tablespoons unsalted butter, melted
  • 1 large egg, at room temperature

Cream Cheese Frosting

  • 3 ounces cream cheese, VERY soft
  • 3 tablespoons unsalted butter, VERY soft
  • 1 teaspoon vanilla bean paste
  • 1 and 1/2 cups confectioners' sugar, sifted
  • 1-2 tablespoons milk
  • 1/2 cup walnuts, chopped, for decorating

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly grease a doughnut pan and set it aside to ready for the batter.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, dark brown sugar, salt, cinnamon, and baking powder to evenly combine all dry components.
  3. Prepare Wet Ingredients: In another bowl, whisk the mashed ripe bananas, melted unsalted butter, and the large egg together until smooth and combined.
  4. Combine Wet and Dry Mixes: Gently fold the wet banana mixture into the dry ingredients, taking care not to overmix to ensure a tender donut texture.
  5. Fill Doughnut Pan and Bake: Spoon the batter into the prepared doughnut pan cavities, filling each about three-quarters full. Bake for 10-11 minutes, or until the donuts spring back when lightly pressed.
  6. Cool Donuts: Allow the donuts to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
  7. Prepare Cream Cheese Frosting: Using a stand mixer with a paddle attachment or a handheld electric mixer, beat the softened cream cheese, softened butter, and vanilla bean paste on medium-high speed until smooth, about 2 minutes. Reduce speed to low and gradually add the sifted confectioners' sugar, then add the milk. Once combined, beat on high for 1-2 more minutes until fluffy.
  8. Frost and Decorate: Spread the cream cheese frosting generously over the cooled donuts and sprinkle with chopped walnuts for a crunchy finishing touch.

Notes

  • Be careful not to overmix the batter to keep the donuts light and tender.
  • Use very ripe bananas for the best flavor and natural sweetness.
  • Make sure the cream cheese and butter are very soft for a smooth frosting.
  • Donuts are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 3 days.
  • For a dairy-free version, substitute butter and cream cheese with vegan alternatives.
