These Banana Bread Cookies combine the soft, moist flavor of classic banana bread with the convenience and crispness of cookies. Featuring ripe bananas, oats, and a sweet cream cheese glaze, they are perfect for a quick snack or dessert with a comforting, familiar taste.

Ingredients

Cookie Dough

  • 2 ripe bananas (mashed)
  • 1/2 cup unsalted butter (softened)
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar (packed)
  • 1 large egg (at room temperature)
  • 3/4 teaspoon vanilla bean paste
  • 1 1/2 cups all-purpose flour
  • 1/2 cup quick oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Glaze

  • 2 ounces cream cheese (softened)
  • 1 cup powdered sugar
  • 1 to 2 teaspoons milk (more if needed)
  • Chopped pecans or walnuts (for garnish, optional)

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Mix wet ingredients: In a large bowl, combine the mashed ripe bananas with the softened unsalted butter. Stir in both the granulated sugar and light brown sugar until the mixture is smooth. Beat in the egg and vanilla bean paste thoroughly to incorporate air and enhance flavor.
  3. Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, quick oats, baking soda, baking powder, and salt to evenly distribute the leavening agents and salt throughout the flour mixture.
  4. Combine wet and dry mixtures: Gradually add the dry ingredients into the banana mixture, stirring until just combined. If the dough feels too wet and doesn’t hold shape when scooped, add one tablespoon of flour at a time until the dough firms up, being careful not to overmix to maintain tender cookies.
  5. Scoop dough: Using a spoon or cookie scoop, drop rounded tablespoonfuls of the dough onto the prepared baking sheet, spacing each cookie about 2 inches apart to allow for spreading during baking.
  6. Bake cookies: Place the baking sheet in the preheated oven and bake for approximately 10 minutes, or until the cookie edges are lightly golden brown. Remove from oven and let cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
  7. Prepare glaze: While the cookies cool, prepare the glaze by beating the softened cream cheese with powdered sugar and 1 to 2 teaspoons of milk in a small bowl until smooth and creamy. Adjust milk amount for desired glaze consistency.
  8. Glaze and garnish: Drizzle the cream cheese glaze over the cooled cookies. Optionally, sprinkle chopped pecans or walnuts on top for added texture and flavor. Allow glaze to set briefly before serving. Enjoy your Banana Bread Cookies!

Notes

  • Ensure bananas are ripe for maximum sweetness and flavor.
  • The dough consistency should be firm enough to hold shape; add more flour if needed.
  • Do not overmix once dry ingredients are added to avoid tough cookies.
  • The glaze can be adjusted for thickness by adding more powdered sugar or milk.
  • For a nut-free version, omit the nuts garnish.
  • Store cookies in an airtight container for up to 3 days or refrigerate the glazed cookies for longer freshness.
