This Balsamic Strawberry Flatbread offers a delightful combination of tangy balsamic glaze, fresh strawberries, creamy feta, and mozzarella on a soft Greek yogurt-based flatbread crust. Perfect for a light lunch or appetizer, it combines savory and sweet flavors in a quick and easy 30-minute bake.

Ingredients

Dry Ingredients

  • 1 1/4 cup flour (+ more to roll out)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients and Toppings

  • 1 cup Greek yogurt
  • 1/2 cup mozzarella cheese
  • 1 1/4 cup strawberries (sliced)
  • Salt and pepper, to taste
  • 1/2 cup feta cheese (crumbled)
  • 8 basil leaves (julienned)
  • 1/4 cup balsamic glaze

Instructions

  1. Preheat Oven: Preheat your oven to 425°F and line a baking sheet with parchment paper to prepare for baking the flatbread.
  2. Make Flatbread Dough: In a bowl, combine the flour, baking powder, baking soda, and salt. Add the Greek yogurt and stir well with a wooden spoon until the dough becomes shaggy and sticky. Transfer the dough to a well-floured surface, sprinkle with more flour, fold the dough over itself several times, and then shape it into a ball.
  3. Shape and Prepare Dough: Place the dough ball on the parchment-lined baking sheet. Using your hands, press and shape it into a rectangular flatbread about 1/4 inch thick.
  4. Add Cheese and Seasoning: Sprinkle the mozzarella cheese evenly over the flatbread, leaving a border around the edges. Season the cheese layer with salt and pepper to taste.
  5. Add Strawberries and Feta: Distribute the sliced strawberries and crumbled feta cheese evenly across the top of the flatbread.
  6. Bake: Bake in the preheated oven for 15 to 20 minutes, or until the crust turns a nice golden brown and the cheese has melted.
  7. Finish and Serve: Remove from the oven and immediately sprinkle the flatbread with julienned basil leaves. Drizzle the balsamic glaze over the top before slicing and serving.

Notes

  • For a crispier crust, bake the flatbread directly on a preheated pizza stone or baking steel.
  • Use fresh and ripe strawberries for the best flavor contrast with the balsamic glaze.
  • You can substitute the basil with fresh mint for a different aromatic twist.
  • For a vegetarian version, ensure the mozzarella and feta cheeses are made with vegetarian rennet.
  • Leftovers can be stored in the fridge and gently reheated in the oven for a crispy finish.
