Ingredients

Dry Ingredients

  • 1 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 teaspoon salt

Wet Ingredients

  • 1 ripe avocado
  • 1 cup milk
  • 3/4 cup maple syrup
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla bean paste

Frosting

  • 1 ripe avocado
  • 1 tablespoon unsalted butter (softened)
  • 1/2 teaspoon vanilla bean paste
  • 2 cups powdered sugar (sifted)
  • Chocolate sprinkles (for topping)

Instructions

  1. Preheat the oven and prepare pan: Preheat your oven to 350°F (175°C). Lightly spray a donut pan with nonstick baking spray or grease it with oil to prevent sticking.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, cocoa powder, and salt until evenly combined. Set aside.
  3. Mash avocado: In a separate bowl, mash 1 ripe avocado until smooth with no lumps remaining.
  4. Combine wet ingredients: To the mashed avocado, add milk, maple syrup, vanilla bean paste, and apple cider vinegar. Mix thoroughly until the mixture is smooth and well combined.
  5. Make batter: Pour the wet mixture into the bowl with dry ingredients. Gently mix until just combined, being careful not to overmix.
  6. Fill donut pan: Use a spoon or piping bag to fill each donut cavity about 3/4 full with the batter.
  7. Bake donuts: Place the pan in the oven and bake for 16-18 minutes or until a toothpick inserted into the donuts comes out clean. Allow donuts to cool for a few minutes in the pan.
  8. Cool donuts completely: Remove donuts from the pan and transfer to a wire rack to cool completely before frosting.
  9. Prepare frosting: In a medium mixing bowl, mash 1 ripe avocado with softened unsalted butter until smooth. Beat in vanilla bean paste. Gradually add powdered sugar and mix until the frosting reaches a smooth and spreadable consistency. Add more powdered sugar if needed.
  10. Frost and decorate: Spread the avocado frosting on cooled donuts and sprinkle chocolate sprinkles on top to finish.

Notes

  • Make sure to use ripe avocados for a creamy texture and better flavor.
  • Don’t overmix the batter to keep the donuts light and fluffy.
  • Allow donuts to cool completely before frosting to prevent melting.
  • Maple syrup adds natural sweetness, but you can substitute with honey or agave syrup if desired.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
