These Asian Chicken Lettuce Wraps are a flavorful and healthier alternative to restaurant versions like P.F. Chang's. Ground chicken is cooked with crunchy veggies and a savory-sweet homemade sauce, then served in fresh lettuce leaves for a light, satisfying meal perfect for lunch or dinner.

Ingredients

Protein & Veggies

  • 1 pound ground chicken
  • ½ onion, finely diced
  • 1 cup red or green bell pepper, finely diced
  • 8 ounces water chestnuts, drained & finely diced

Oils & Sauces

  • 1 tablespoon peanut oil (plus 2 tablespoons more for cooking)
  • 3 tablespoons soy sauce
  • 3 tablespoons hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon peanut butter
  • 1 tablespoon honey
  • 2 teaspoons sweet chili sauce

Seasonings & Garnishes

  • ½ tablespoon minced garlic
  • ½ teaspoon garlic powder
  • ¼ teaspoon powdered ginger
  • ¼ cup crushed peanuts
  • ¼ cup sliced green onions
  • Lettuce leaves or your favorite Asian salad for serving

Instructions

  1. Prepare the sauce: In a bowl, whisk together the soy sauce, hoisin sauce, sesame oil, rice vinegar, peanut butter, honey, sweet chili sauce, garlic powder, and powdered ginger until fully combined. If the peanut butter is firm, microwave the mixture for 30 to 60 seconds to melt it and help everything blend smoothly.
  2. Heat the oil and cook chicken: Warm 2 tablespoons of peanut oil in a frying pan over medium-high heat. Add the ground chicken, finely diced onion, and minced garlic. Cook, stirring occasionally, until the chicken is browned and the onions turn translucent, about 5 to 10 minutes.
  3. Add vegetables: Stir in the diced bell peppers and water chestnuts. Continue cooking for about 5 minutes until the peppers soften slightly but remain crisp.
  4. Combine with sauce: Pour the prepared sauce over the chicken and vegetables. Lower the heat to a simmer and cook until everything is evenly coated and heated through, stirring occasionally.
  5. Serve: Spoon the warm chicken mixture into fresh lettuce leaves or on top of your favorite Asian salad. Garnish with crushed peanuts and sliced green onions for added texture and flavor. Optionally, serve over noodles or rice for a heartier meal.

Notes

  • For a vegetarian version, substitute ground chicken with finely chopped mushrooms or plant-based protein.
  • If you prefer less sweetness, reduce the honey and sweet chili sauce amounts.
  • Use iceberg, butter lettuce, or romaine hearts for the best lettuce wraps.
  • To enhance spiciness, add a pinch of red pepper flakes or sriracha sauce to the sauce mix.
  • Make ahead tip: You can prepare the chicken mixture in advance and reheat before serving.
