A vibrant and crunchy Asian Brussels Sprout Salad featuring shredded Brussels sprouts, colorful bell peppers, carrots, and a flavorful almond butter dressing with ginger, garlic, and sesame notes. Perfect as a refreshing side or light meal.

Ingredients

Salad

  • 1 lbs Brussels sprouts (5-6 cups shredded)
  • 1 medium red or yellow bell pepper (thinly cut into bite sized pieces)
  • 2 carrots (julienned or shredded)
  • 3/4 cup thinly sliced scallions
  • 2/3 cup chopped cilantro
  • 1/2 cup chopped salted cashews or peanuts
  • 2 tbsp sesame seeds

Dressing

  • 1/4 cup almond butter or cashew butter
  • 1 tbsp lime juice
  • 2 tbsp apple cider vinegar
  • 2 tbsp sesame oil
  • 3 tbsp coconut aminos (or tamari/soy sauce)
  • 2 inch ginger root (peeled and roughly chopped)
  • 2 cloves garlic
  • 2 tsp honey (or 2 medjool dates if doing Whole30)

Instructions

  1. Shred Brussels Sprouts: Remove any tough outer leaves from the Brussels sprouts and cut each in half lengthwise. Then slice thinly to create shredded pieces. Alternatively, use a mandoline or food processor for speedy shredding.
  2. Combine Vegetables: In a large bowl, add the shredded Brussels sprouts along with sliced bell pepper, shredded carrots, scallions, chopped cilantro, chopped salted cashews or peanuts, and sesame seeds. Toss gently to mix.
  3. Prepare Dressing: In a blender or Nutribullet, combine almond or cashew butter, lime juice, apple cider vinegar, sesame oil, coconut aminos (or tamari/soy sauce), peeled ginger root, garlic cloves, and honey (or medjool dates). Blend until the dressing is smooth and creamy.
  4. Dress and Toss Salad: Pour the dressing over the salad ingredients in the large bowl and toss well until all components are evenly coated.
  5. Rest Before Serving: Allow the salad to rest for 10 minutes before serving. This resting time softens the shredded Brussels sprouts, enhancing texture and flavor.

Notes

  • You can substitute cashews with peanuts based on preference or allergy considerations.
  • For a Whole30 compliant version, replace honey with 2 medjool dates in the dressing.
  • The resting period helps soften the Brussels sprouts, making the salad more palatable and flavorful.
  • Use coconut aminos as a soy-free alternative to soy sauce or tamari.
  • Adjust the amount of sesame seeds or nuts according to your desired crunch level.
