A wholesome and delicious Apple Pie Overnight Oats recipe that combines soft caramelized apples with creamy oat milk, chia seeds, and warm cinnamon flavors. Perfect for a nutritious and easy make-ahead breakfast that tastes like dessert.

Ingredients

Wet Ingredients

  • 1 1/4 cups oat milk
  • 3 tbsp maple syrup (divided)
  • 1 tsp vanilla bean paste

Dry Ingredients

  • ½ cup rolled oats
  • 2 tbsp chia seeds
  • 1 tsp ground cinnamon (divided)
  • Pinch of salt

Fruit

  • 1 ½ cups apple (peeled and diced)

Instructions

  1. Cook the Apples: In a small saucepan over medium heat, combine the peeled and diced apples with 1 tablespoon maple syrup and ½ teaspoon ground cinnamon. Add a small splash of water if the apples are firm to help soften them.
  2. Simmer and Caramelize: Cook the apples for about 5–7 minutes, stirring frequently until they become soft and lightly caramelized. Remove from heat and allow to cool slightly.
  3. Prepare the Milk Mixture: In a bowl or large measuring glass, whisk together the oat milk, remaining 2 tablespoons maple syrup, vanilla bean paste, remaining ½ teaspoon cinnamon, and a pinch of salt until well combined.
  4. Assemble the Jars: Divide the rolled oats and chia seeds evenly between two jars or containers with lids.
  5. Add Milk Mixture and Stir: Pour the oat milk mixture evenly into the jars over the oats and chia seeds. Stir well to combine all ingredients. Let the mixture sit for about 10 minutes to begin thickening, then stir again to redistribute the oats and chia seeds evenly.
  6. Top with Apples: Spoon the cooked apple mixture over the top of each jar.
  7. Refrigerate Overnight: Cover the jars and refrigerate for at least 8 hours or overnight until the oats are thick and creamy. The overnight oats can be stored in the refrigerator for up to 4 days.

Notes

  • Use a small splash of water when cooking apples if they are very firm to prevent burning and promote softening.
  • Maple syrup sweetness can be adjusted according to taste.
  • Vanilla bean paste adds depth of flavor but can be substituted with vanilla extract if unavailable.
  • For a crunchier texture, add nuts or seeds before serving.
  • These oats are best eaten cold straight from the fridge or can be warmed slightly before serving if preferred.
