Ingredients

Dough Ingredients

  • 1 cup water, warmed (about 105°-110°F)
  • 2 tablespoons granulated sugar
  • 1 teaspoon active dry yeast
  • ⅓ cup (73 g) vegetable oil, divided
  • 2 ½ cups (312.5 g) all-purpose flour
  • ½ teaspoon kosher salt

Topping Ingredients

  • ½ cup (1 stick / 113 g) unsalted butter, melted
  • ½ cup (100 g) light brown sugar, packed
  • 2 tablespoons ground cinnamon
  • ½ teaspoon vanilla extract
  • 3 medium Granny Smith apples, cored, peeled, finely diced

Glaze Ingredients

  • 1 cup (125 g) confectioners' sugar
  • 2-3 tablespoons whole milk

Instructions

  1. Activate Yeast: In a large bowl, combine the warmed water, granulated sugar, and active dry yeast. Let the mixture rest for about 5 minutes, or until the yeast blooms and becomes frothy.
  2. Add Oil: Pour half of the vegetable oil into the yeast mixture and stir gently to combine.
  3. Mix Dry Ingredients: Add the all-purpose flour and kosher salt to the yeast mixture. Stir thoroughly to form a dough.
  4. First Rise: Transfer the dough to a greased bowl, cover it, and let it rise in a warm place for 1 hour or until it doubles in size.
  5. Preheat Oven and Prepare Pan: Preheat the oven to 450°F (232°C). Pour the remaining vegetable oil into a 9×11-inch baking pan and use a pastry brush to coat the bottom evenly.
  6. Shape Dough: Transfer the risen dough to the prepared baking pan, spreading it out to the edges.
  7. Prepare Topping: In a medium bowl, combine the melted unsalted butter, light brown sugar, ground cinnamon, and vanilla extract. Stir until fully combined, then fold in the finely diced Granny Smith apples until evenly coated.
  8. Layer Topping: Spread one-third of the apple mixture over the dough, then gently fold the edges of the dough toward the center, covering part of the filling.
  9. Flip and Stretch Dough: Carefully flip the dough so the seam side is down. Gently press and stretch the dough back out to the edges of the pan.
  10. Create Dimples: Use your fingertips to create deep dimples all over the surface of the dough to help hold the topping and develop texture.
  11. Top with Remaining Apples: Spread the remaining apple mixture evenly over the top of the dough.
  12. Bake: Bake in the preheated oven for 28-30 minutes, or until the bread turns golden brown and the apples are bubbly and caramelized.
  13. Make Glaze: While the bread bakes, prepare the glaze by whisking together the confectioners' sugar and whole milk, one tablespoon of milk at a time, until the glaze is smooth and reaches desired consistency.
  14. Drizzle Glaze and Serve: Once the focaccia is warm from the oven, drizzle the glaze evenly over the top before serving.

Notes

  • Use Granny Smith apples for a tart contrast that balances the sweet topping.
  • Ensure water is warm but not hot to properly activate the yeast.
  • Creating dimples in the dough helps retain moisture and the topping flavors.
  • Adjust the glaze thickness by adding milk gradually to avoid it being too runny or too stiff.
  • Serve warm for best flavor and texture; leftovers can be reheated gently.
  • This focaccia is sweeter than traditional savory versions, making it suitable as a dessert or breakfast bread.
