Ingredients

Wet Ingredients

  • 1/4 cup creamy almond butter
  • 1/4 cup unsweetened applesauce
  • 1/4 cup pure maple syrup
  • 1 large egg
  • 2 teaspoons vanilla bean paste

Dry Ingredients

  • 1 cup oat flour*
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1 cup old fashioned oats

Add-ins

  • 1 cup grated apple (Honeycrisp or Granny Smith recommended)
  • 1/3 cup toasted chopped walnuts*
  • 1/4 cup raisins

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper. This ensures your cookies bake evenly and don’t stick.
  2. Combine Wet Ingredients: In a large bowl, whisk together the almond butter, unsweetened applesauce, pure maple syrup, large egg, and vanilla bean paste until the mixture is smooth and well incorporated.
  3. Add Dry Ingredients: Add the oat flour, baking soda, kosher salt, ground cinnamon, and ground cloves to the wet mixture. Stir just until combined to avoid overmixing, then fold in the old fashioned oats, grated apple, toasted chopped walnuts, and raisins evenly throughout the dough.
  4. Portion the Dough: Using approximately 2 tablespoons per cookie, scoop the dough onto the prepared baking sheet, spacing them adequately to allow for slight spreading.
  5. Bake Cookies: Bake in the preheated oven for 10 to 12 minutes, until the cookies are set but still soft to the touch. They should appear lightly golden on the edges.
  6. Cool: Remove the baking sheet from the oven and let the cookies cool on it for 5 minutes. Then transfer the cookies to a wire rack to cool completely, allowing them to firm up slightly for the perfect chewy texture.

Notes

  • Use oat flour made from ground oats; you can make your own by blending rolled oats until fine.
  • Choose tart apples like Granny Smith or sweet crisp varieties like Honeycrisp for the best flavor.
  • To toast walnuts, place them in a dry skillet over medium heat until fragrant and lightly browned, about 3-5 minutes, stirring frequently.
  • Store cooled cookies in an airtight container at room temperature for up to 4 days or freeze for longer storage.
  • For a nut-free version, substitute almond butter and walnuts with sunflower seed butter and chopped seeds.
