Made with simple ingredients and cooked in an air fryer, these individual molten cakes are delightfully decadent and ready in just 20 minutes, making them perfect for an indulgent treat or special occasion dessert.

Ingredients

Chocolate Mixture

  • 3 ounces chocolate (pieces)
  • 4 tablespoons unsalted butter

Egg Mixture

  • 2 large eggs
  • 1 large egg white
  • 1/3 cup granulated sugar

Dry Ingredients

  • 1/4 cup all-purpose flour
  • 1 teaspoon confectioner's sugar (for dusting)

Instructions

  1. Prepare Ramekins: Spray two 6-ounce ramekins with nonstick cooking spray and set them aside to ensure the cakes release easily after cooking.
  2. Melt Chocolate and Butter: Place the butter and chocolate pieces in a medium microwave-safe bowl. Microwave for 60-90 seconds, stirring every 30 seconds until fully melted and combined into a smooth mixture.
  3. Whisk Eggs and Sugar: In a separate bowl, whisk together the two large eggs, one egg white, and granulated sugar until the mixture becomes frothy, ensuring a light texture in the cake.
  4. Combine Mixtures: Pour the egg and sugar mixture into the melted chocolate and butter mixture. Gently mix to combine all ingredients thoroughly.
  5. Add Flour: Using a spatula, fold the all-purpose flour into the chocolate batter carefully, mixing just until combined to avoid overmixing which can affect texture.
  6. Fill Ramekins: Divide the batter evenly and pour into the prepared ramekins, filling them almost to the top.
  7. Air Fry: Place the ramekins in the air fryer and cook at 370°F (188°C) for 8-10 minutes. Monitor closely to ensure the lava cakes don’t overcook, aiming for tops that have risen with slightly crispy edges.
  8. Cool and Remove: Once cooked, allow the ramekins to cool for a minute. Use a thick dish towel to carefully remove them from the air fryer basket.
  9. Unmold Cakes: Run a sharp knife around the edges of each cake to loosen it from the ramekin. Carefully flip the cakes onto serving plates.
  10. Serve: Dust with confectioner's sugar and serve immediately to enjoy the molten center at its best.

Notes

  • Keep a close eye during air frying as cooking time may vary slightly depending on your air fryer model.
  • Do not overmix the batter after adding flour to keep the cakes light and tender.
  • If desired, serve with vanilla ice cream or fresh berries for added flavor.
  • Use high-quality chocolate for the best melting and flavor results.
  • Ramekins should be 6-ounce size to ensure proper cooking time and texture.
