These Air Fryer French Toast Bites are a quick and delicious breakfast treat perfect for two. Made with soft brioche bread dipped in a cinnamon-vanilla egg mixture, then air fried to golden perfection and coated in cinnamon sugar, they are crispy on the outside and tender on the inside. Ready in just 20 minutes, they're an easy, fun way to enjoy classic French toast in bite-sized form.

Ingredients

For the French Toast Bites

  • 4 slices brioche bread
  • 2 large eggs
  • ¼ cup milk
  • Pinch of salt
  • ½ teaspoon vanilla extract
  • ¾ teaspoon ground cinnamon

For the Topping

  • ¼ cup granulated sugar
  • Remaining ½ teaspoon ground cinnamon (from the ¾ teaspoon total)

Instructions

  1. Cut the Brioche: Slice each of the 4 brioche bread slices into 9 small squares, creating bite-sized pieces perfect for air frying.
  2. Prepare the Egg Mixture: In a shallow bowl, whisk together 2 large eggs until lightly beaten. Add ¼ cup milk, ½ teaspoon vanilla extract, ¼ teaspoon ground cinnamon, and a pinch of salt. Whisk thoroughly until the mixture is smooth and fully combined.
  3. Preheat the Air Fryer: Set your air fryer to 350°F (175°C) and generously spray the basket with cooking oil to prevent sticking.
  4. Dip the Bread Squares: Dip each bread square into the egg mixture for about 5 seconds on each side, ensuring they absorb some of the mixture but do not get soggy. Only dip as many pieces as will fit into the basket in a single layer.
  5. Air Fry the Bites: Arrange the coated bread squares in a single layer inside the air fryer basket. Cook for 5 to 8 minutes until the bites turn golden brown and crisp on the outside.
  6. Make the Cinnamon-Sugar Topping: While the bites are cooking, combine the remaining ½ teaspoon ground cinnamon with ¼ cup granulated sugar in a small bowl and mix well.
  7. Coat the French Toast Bites: Once the bites are done, immediately toss them in the cinnamon-sugar mixture so it sticks evenly and adds sweetness and spice.
  8. Repeat with Remaining Bread: Continue dipping, air frying, and coating the rest of the bites until all pieces are cooked.
  9. Serve Warm: Serve the French toast bites warm. Optionally garnish with powdered sugar, drizzle with maple syrup, or add fresh fruit for a complete and satisfying breakfast.

Notes

  • Use brioche or any thick, soft bread for best texture.
  • Do not overcrowd the air fryer basket to ensure even cooking and crispness.
  • If your air fryer requires shaking or flipping, carefully turn bites halfway through cooking.
  • To keep bites warm while finishing batches, place them in a low oven (around 200°F) wrapped loosely with foil.
  • Feel free to customize toppings with chopped nuts, chocolate chips, or fresh berries.
