Ingredients

For the Chicken Marinade:

  • 1.5 pounds chicken thighs
  • 2 teaspoons garlic powder
  • 2 tablespoons soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons unseasoned rice vinegar
  • 3 tablespoons cornstarch

Glaze Ingredients:

  • 1/3 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 3 tablespoons light brown sugar
  • 2 cloves garlic, minced
  • 1/4 cup water
  • 1 tablespoon butter
  • Additional:

    • Wooden skewers, soaked in water for 10 minutes
    • Green onions for garnish (optional)

Instructions

  1. Prepare the Chicken: Pat dry the chicken thighs and cut them into 1.5 to 2 inch pieces. In a bowl, combine the chicken pieces with soy sauce, rice vinegar, cornstarch, garlic powder, salt, and pepper. Mix well and let the chicken marinate for at least 30 minutes to 1 hour to allow the flavors to infuse.
  2. Soak the Skewers: While the chicken is marinating, soak the wooden skewers in water for about 10 minutes to prevent burning during cooking.
  3. Assemble the Skewers: Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a small space between each piece to promote even air circulation and cooking.
  4. Preheat and Air Fry: Preheat your air fryer to 400°F (204°C). Place the chicken skewers in a single layer in the air fryer basket, taking care not to overcrowd. Air fry for 7 to 8 minutes.
  5. Flip and Continue Cooking: Flip the skewers over and air fry for an additional 7 to 8 minutes, or until the chicken is cooked through and has a golden, crispy exterior.
  6. Make the Glaze: While the chicken cooks, heat butter in a skillet over medium heat. Sauté the minced garlic until fragrant, about 1 minute. Add the sweet chili sauce, soy sauce, brown sugar, and water. Stir and simmer the sauce until it slightly thickens, about 3 to 5 minutes.
  7. Glaze the Chicken: Once the chicken is finished cooking, brush the skewers generously with the prepared sweet chili glaze.
  8. Serve: Garnish the glazed chicken skewers with freshly chopped green onions if desired, and serve immediately.

Notes

  • For best results, allow the chicken to marinate for at least 30 minutes to enhance flavor and tenderness.
  • Do not overcrowd the air fryer basket to ensure even cooking and crispiness.
  • Use wooden skewers soaked in water to prevent burning during air frying.
  • Feel free to adjust the amount of sweet chili sauce and brown sugar in the glaze for more or less sweetness and spice according to your preference.
  • Serve with steamed rice or a fresh salad to complete the meal.
