A quick and vibrant 5-Minute Parsley Pesto Sauce made with fresh parsley, baby spinach, garlic, pine nuts, Parmesan cheese, lemon juice, and extra virgin olive oil. This versatile pesto adds a bright, herbaceous flavor perfect for pasta, sandwiches, or as a dip.

Ingredients

Herbs and Greens

  • 2 packed cups parsley
  • 1 cup packed baby spinach

Other Ingredients

  • Juice of half a lemon
  • 2 cloves garlic
  • 1/3 cup raw pine nuts
  • 1/2 cup shredded Parmesan cheese
  • 1/4 tsp Kosher salt
  • 1/2 cup extra virgin olive oil

Instructions

  1. Prepare Ingredients: Add all the ingredients except the olive oil into the bowl of a food processor fitted with an S-blade. This includes parsley, baby spinach, lemon juice, garlic, pine nuts, Parmesan cheese, and kosher salt.
  2. Pulse the Mixture: Pulse the food processor 5-10 times until the ingredients are well combined but still retain some texture. Use a rubber spatula to scrape down the sides as needed to ensure even mixing.
  3. Add Olive Oil: With the food processor running, slowly pour in the extra virgin olive oil. Be careful not to overblend; the pesto should maintain a slightly coarse texture.
  4. Serve and Enjoy: Scoop out the prepared pesto and use it immediately on your favorite dishes such as pasta, sandwiches, or as a flavorful dip.

Notes

  • For a nuttier flavor, lightly toast pine nuts before blending.
  • The pesto can be stored in an airtight container in the refrigerator for up to 3 days.
  • Add a bit more olive oil if the pesto is too thick for your liking.
  • Can substitute Parmesan with Pecorino Romano for a sharper taste.
  • Use fresh parsley for the best flavor, flat-leaf parsley preferred.
